What is Vegetable Boondi Raita

Vegetable Boondi Raita is seasoned yoghurt with herbs and vegetables. Fine bits of carrots and capsicum speckle this flavorful yoghurt along with fried tiny balls of gram flour batter. The raita generally takes the name of the vegetable that primarily goes into the yoghurt. Example onion raita, cucumber raita, beetroot raita and so on.

Indian Raita is somewhat similar but not thick as  Greek yoghurt – Tzatziki or the Middle Eastern flavoured Yoghurt dip- Labneh

Ingredients

Curd/Yoghurt – You can use homemade or store-bought yoghurt. Use only fresh yoghurt.  It is a good source of Calcium and B vitamins. The yoghurt is thinned down with water for raita.

Boondi (spicy or plain)– Boondi is fried droplets or balls of chickpea flour batter. Boondi adds texture to the raita. Soaking the fried boondi removes traces of oil in it and removes the smell of stale oil.

Carrots– Use finely chopped carrots of  any variety – red or orange

Capsicum – Finely chop the capsicum. Good source of Vitamin C

Onions – Use sparingly or you may omit

Green chili– Use sparingly as its heat should not offset  the cooling effect of raita

Coriander leaves, mint leaves– Impart flavor and colour. Mint has a cooling effect

Spices – Use table salt, rock salt, black pepper powder, and red chili powder according to preference.   Cumin powder aids in digestion, weight loss, and diabetes prevention. Roasting the cumin seeds enhances their flavours

Chaat Masala Powder – This is a readily available tangy mix of spice powders. It mainly consists of amchoor (dried mango powder), cumin, coriander, dried ginger, salt (often kala namak), black pepper, asafoetida (hing), and chili powder. Use in moderation. You can prepare it at home too.

How to make Vegetable Boondi

With step-by-step instructions

Soak Boondi

Soak boondi in warm water for two minutes. This step is optional, the general argument being that the boondi will get soaked anyway when it goes into the yoghurt. My logic rationale is that soaking the fried boondi in warm water eliminates traces of oil and the smell of stale oil

Drain and slightly squeeze the soaked boondi without mashing it.

Mixing  Yoghurt with other Ingredients

Firstly, add water to the yoghurt and whisk it well with a wire whisk until smooth and creamy

Then add carrot, capsicum and onion.

Further add green chilies, coriander leaves and mint leaves

Now add table salt, rock salt, black pepper powder, red chili powder, chaat masala and roasted cumin powder

Mix everything gently.

Lastly add the boondi and lightly combine. Raita is ready.

For optimum taste, keep the raita in the fridge for at least an hour.

Just before serving  Vegetable Boondi Raita, you may sprinkle some chaat masala, red chili powder or black pepper powder. Garnish with chopped mint and coriander leaves.

  • 1 cup plain yoghurt

  • 1/8 tsp red chili pdr optional
  • ¼ tsp chaat masala powder
  • ¼ tsp roasted cumin powder
  • ¼ cup water adjust according to consistency needed

Instructions

Is Vegetable Boondi Raita good for weight loss?

Curd/Yoghurt is high in protein and low in unhealthy fats. For weight loss cut down the quantity of boondi to bare minimum. Instead, increase the carrots and capsicum. Moreover soak the boondi for a few minutes to eliminate the oil.
