Garlic Broccoli Pasta with Parmesan

Garlic Broccoli Pasta with Parmesan is a perfect meal, or side dish that requires just a few basic ingredients. It is a good choice for those who prefer to avoid creamy sauces in their pasta. The subtle garlic flavor , combined with peppery undertones, lime zest and slightly sharp nutty flavors of Parmesan all harmonize beautifully in this recipe.

Equipment

  • 1 heavy bottom pan
  • 1 spatula

Ingredients
  

  • 1 cup fusilli pasta 100gm 100 gm
  • 1 medium broccoli 300 gm
  • 2 tbsp Parmesan cheese
  • 6 cloves garlic
  • ½ tsp black pepper crushed
  • 1/4 tsp red chili flakes
  • 2.5-3 tbsp Olive oil
  • 1 lime
  • Water to boil pasta
  • 1.5 tsp salt adjust

Instructions
 

1 cup = 250ml

    Broccoli

    • Cut broccoli into small floret. Trim off its edges.
    • Rinse broccoli in water.
    • Heat water and let it boil or reach boiling point. Add salt and put off the flame. Steep the florets for 15 minutes in this hot water.

    Pasta

    • Firstly, heat water in a pan and let it come to a rolling boil.
    • Now add fusilli pasta and ½ tsp salt.
    • Boil the pasta till al dente. Drain and drizzle ½ tbsp olive oil so that the pasta doesn’t stick to one another. Reserve a few tablespoons of water in which pasta was boiled, for later. Must read details above in this post and also the tips given below.

    Garlic

    • Crush/mince/grate garlic with a garlic press or grater.

    How to make Broccoli Pasta with Parmesan

    • Now take 2 tbsp olive oil in a flat bottom pan and heat it.
    • Add crushed garlic and sauté it until fragrant.
    • When it turns light pink, add broccoli and ¼ tsp salt. Toss and sauté over medium heat till broccoli softens a bit.
    • Now add the pasta, red chili flakes, crushed black pepper powder and zest . Stir so that the spices are incorporated uniformly with the pasta. Add around ¼ tsp salt if needed and another ½ tbsp oil.
    • Sprinkle a tbsp of parmesan cheese, and around two tablespoons of water. Turn the flame to low. Cover and cook for 2 minutes. This step will enhance the silkiness of pasta since we are not using any sauces in this recipe.
    • Lastly add 1 tablespoon parmesan cheese. You may add more if you wish.
    • Serve hot or cold.
