Pasta with Vegan Soya Sauce

This Pasta with Vegan Soya Sauce | Vegan Soya Bolognese Pasta is a healthy and highly recommended   option for vegan and vegetarian  lovers. It is light and a very proteinaceous recipe. The sauce consists of soya granules cooked with onions and tomatoes to give a luscious thick sauce/ gravy.

Ingredients
  

For Soya Granules Sauce/Gravy

  • 1/2 cup soya granules
  • 1 pc large onion finely chopped
  • 1 pc medium tomato finely chopped
  • 1 pc green chilli finely chopped
  • 1 tbsp ginger garlic paste
  • 1 tsp salt
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp red chilli powder
  • 1/4 tsp garam masala powder
  • 1 cup water or as required
  • 1/4 cup oil for cooking

For Pasta

  • 1/2 cup Fusilli Spiral pasta boiled in salt water
  • 2 tsp olive oil
  • 1 tsp finely chopped garlic
  • 1/8 cup carrot juliennes
  • 1/8 cup capsicum juliennes assorted colours
  • 1/4 tsp oregano powder
  • 1/4 tsp Italian herbs mix

Instructions
 

For Vegan Soya Bolognese

  • Arrange and get organised with your ingredients.
  • Immerse soya granules in hot water for ten minutes . Rinse and drain under running water. squeeze out water and keep aside
  • Heat oil in a pan or pressure cooker and saute chopped onions till light brown.
  • Add the ginger garlic paste and chillies and saute for a minute
  • Now add the soya granules and saute for a minute
  • Then tip in the salt, turmeric powder, coriander powder and chilli powder and saute for 5-7 minutes. Then add the chopped tomatoes.
  • Add water and finally sprinkle garam masala powder.
  • Cover pan and cook for 20 minutes in a pan or cook for 3 whistles in a pressure cooker.

For Pasta

  • Heat olive oil in a wide pan and lightly saute the finely chopped garlic
  • Now add the capsicum and carrot juliennes , oregano powder and Italian herb mix
  • Finally add the pasta and toss gently.

Combining Pasta with Vegan Soyanese

  • Spoon out a generous quantity of soya garnules sauce over a bed of pasta.
  • Sprinkle some scallions over the pasta
  • Enjoy it warm.

Notes

  • Boil the pasta till just done.
  • A bit of tomato sauce can also be added to the soya granules sauce.
  • Alternatively you may add vegetable stock cubes to the soya granules sauce instead of the dry spices.
