Dates and Nuts Roll

Dates and Nuts Rolls is a healthy and crunchy sweet that can be made in a jiffy. A slice of this dates roll is enough to recoup your burst of energy. This sweet can be made diabetic - friendly by substituting the coating of sugar with desiccated coconut or powdered nuts.

Ingredients
  

  • 300 grams dates deseeded and chopped
  • 50 grams cashew nuts chopped
  • 50 grams almonds chopped
  • 50 grams pistachios chopped
  • 3 to 4 tablespoons evaporated milk or condensed milk
  • 1 tablespoon oil or Ghee
  • 1/2 to 1 teaspoon vanilla essence optional

FOR COATING

  • 3 tablespoon powdered sugar or desiccated coconut or powdered nuts

Instructions
 

  • In a pan, dry roast the chopped nuts on medium heat for a minute taking care not to burn the nuts. Keep them aside.
  • Take oil or ghee in another heavy bottom skillet and saute the dates. Stir at regular intervals.
  • In between add the evaporated or condensed milk to the dates. Within 3 to 4 minutes the dates become soft mushy mass.
  • Add the nuts to the dates and saute for a minute. Now put off the flame.
  • Add the Vanilla essence at this stage.
  • Mix nicely and let the dates mixture cool slightly.
  • Once the dates mixture is cool enough to handle, grease your palms and make 2 or 3 smooth cylindrical logs with this mixture.
  • Make sure that the rolls are tightly packed and there are no.air bubbles.
  • Coat these dates rolls with powdered sugar.
  • Tightly wrap the rolls in a foil paper and refrigerate for an hour.
  • After an hour take the rolls out from the refrigerator and cut into 1/4" thick slices.
  • Serve and enjoy.
  • You can store the remaining dates rolls at room temperature or in a refrigerator.

Notes

  • You could coat the dates rolls with toasted sesame also.
