In a pan, dry roast the chopped nuts on medium heat for a minute taking care not to burn the nuts. Keep them aside.
Take oil or ghee in another heavy bottom skillet and saute the dates. Stir at regular intervals.
In between add the evaporated or condensed milk to the dates. Within 3 to 4 minutes the dates become soft mushy mass.
Add the nuts to the dates and saute for a minute. Now put off the flame.
Add the Vanilla essence at this stage.
Mix nicely and let the dates mixture cool slightly.
Once the dates mixture is cool enough to handle, grease your palms and make 2 or 3 smooth cylindrical logs with this mixture.
Make sure that the rolls are tightly packed and there are no.air bubbles.
Coat these dates rolls with powdered sugar.
Tightly wrap the rolls in a foil paper and refrigerate for an hour.
After an hour take the rolls out from the refrigerator and cut into 1/4" thick slices.
Serve and enjoy.
You can store the remaining dates rolls at room temperature or in a refrigerator.
