Cook the soaked quinoa with a pinch of salt in just enough water till it is soft and fluffy. Set aside.
In another pan heat two teaspoons of oil .
Add the garlic to the oil and saute it till garlic turns light pink.
Now add in the chopped onions and saute for a minute till onions sweat.
Then add the vegetables - carrots, capsicums, green chillies and corn .
Stir gently and continue to stir fry for 2-3 minutes
Then add the salt and other dry spices.
Gently stir and saute for two minutes .
Now add the boiled quinoa into the vegetables and stir gently till nicely combined.
Stir fry for two minutes more.
Garnish with coriander. Now you are ready with your healthy Quinoa Stir Fry with Vegetables :)
