Quinoa Stir Fry with Veggies

Ingredients
  

  • How to cook Quinoa
  • 1/2 cup quinoa soaked for 2-3 hours
  • Salt as needed
  • Water to cook quinoa
  • 1 tsp Oil
  • Stir Quinoa with Veggies
  • 1/2 cup finely chopped onions
  • 2 cloves of chopped garlic
  • 1/2 cup green capsicum can use asstd colours too
  • 1/2 cup canned corn kernels
  • 1/2 cup finely chopped carrots
  • 1/4 cup coarsely chopped roasted pine nuts
  • 2 green chilies finely chopped
  • 1 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder/all spice powder
  • salt to taste
  • a few sprigs of chopped coriander
  • 2-3 teaspoon cooking oil

Instructions
 

  • Cook the soaked quinoa with a pinch of salt in just enough water till it is soft and fluffy. Set aside.
  • In another pan heat two teaspoons of oil .
  • Add the garlic to the oil and saute it till garlic turns light pink.
  • Now add in the chopped onions and saute for a minute till onions sweat.
  • Then add the vegetables - carrots, capsicums, green chillies and corn .
  • Stir gently and continue to stir fry for 2-3 minutes
  • Then add the salt and other dry spices.
  • Gently stir and saute for two minutes .
  • Now add the boiled quinoa into the vegetables and stir gently till nicely combined.
  • Stir fry for two minutes more.
  • Garnish with coriander. Now you are ready with your healthy Quinoa Stir Fry with Vegetables  :)
