Festive Meetha Chautha | Fried Sweet Snack

Fried Meetha Chautha is made during the festive Shravan month. It is one of the sweet treats made during Thadri/ Satayain festival in monsoon. It has subtle flavors of cardamom and is crisp on the outside. Customarily it is either made in round shapes 'tikki' or quarters 'chautha'. In today’s times, cookie cutters are used to give fancy shapes to these fried snack.

Ingredients
  

  • 1 cup whole wheat flour atta
  • 1 cup all-purpose flour maida
  • ¼ cup melted ghee
  • 1 tsp crushed cardamom
  • Oil for frying

For Sugar Syrup

  • ½ cup sugar
  • 1/3 cup water adjust to cover sugar

Instructions
 

Sugar syrup

  • Add enough water to cover the sugar. Mix well and keep aside for an hour. Alternatively, you could heat the sugar water mixture on low flame till sugar dissolves. In that case wait for the sugar syrup to cool before using it.

Making dough

  • Now in a mixing bowl take both flours.
  • To this add ghee or oil gradually to make a crumbly textured flour.
  • Then add the sugar syrup and form a firm dough
  • Make equal sized balls from this dough. Keep covered.

Shaping & Frying

  • Roll out one ball to ¼” thickness.
  • Then cut into quarters.
  • Heat oil in a karahi and fry chautha on low medium.
  • Fry till golden brown and drain on absorbent paper.
  • Once cooled down store in airtight container.

Notes

  • Go slow with shortening 'moyan'.
  • Add ghee or oil gradually to the flour. If shortening is excess, then the Chautha may split in the oil.
  • Fry on medium flame to cook Chautha from the inner sides.
  • Make sure to knead a firm dough.
