Almond paste 10-12 almonds soaked for 3 or 4 hrs and skinless 1/8 cup milk Custard - Milk Mixture 1/8 cup milk + 1 tbsp custard powder Infuse Saffron 5-7 strands Saffron 1 tbsp milk Almond Shake 500 ml milk 2 tbsp sugar add more if required 1/2 tsp Cardamom powder A pinch of nutmeg jaiphal Almonds and pistachios for garnishin
How to make almond shake First of all, bring milk to a boil. Then let it simmer for 7-8 minutes.
Then, to this add sugar, cardamom powder and infused saffron milk.
Simmer till sugar melts.
When the sugar is completely melted, add the custard-milk mixture.
Simmer well on low flame to get rid of the raw taste of custard powder.
Now add the almond (badam) paste.
Let it simmer on slow till milk coats the spoon.
Add some nutmeg powder. Mix.
Finally, put off the flame.
Now add some chopped pistachios and almonds.
Lastly, bring the milkshake to room temperature and chill for 3-5 hours.
Serve garnished with more nuts.
Use full-fat milk to make badam milkshake.
After adding badam paste do not boil for more than 2-3 minutes.
Grind the almonds very fine.
You can add vanilla ice cream to the milkshake for a luxurious fervour.
