Badam Milkshake | Almond Shake Recipe

Equipment

Ingredients
  

Almond paste

  • 10-12 almonds soaked for 3 or 4 hrs and skinless
  • 1/8 cup milk

Custard - Milk Mixture

  • 1/8 cup milk + 1 tbsp custard powder

Infuse Saffron

  • 5-7 strands Saffron
  • 1 tbsp milk

Almond Shake

  • 500 ml milk
  • 2 tbsp sugar add more if required
  • 1/2 tsp Cardamom powder
  • A pinch of nutmeg jaiphal
  • Almonds and pistachios for garnishin

Instructions
 

Almond Paste

  • Firstly soak almonds in water for 4-5 hours.
  • Then remove the skin.
  • Now blend the almonds with milk to get almond paste.

Custard-Milk Mixture

  • Mix custard powder with milk very nicely such that no lumps are there.

How to infuse saffron

  • Infuse saffron in lukewarm milk.

How to make almond shake

  • First of all, bring milk to a boil. Then let it simmer for 7-8 minutes.
  • Then, to this add sugar, cardamom powder and infused saffron milk.
  • Simmer till sugar melts.
  • When the sugar is completely melted, add the custard-milk mixture.
  • Simmer well on low flame to get rid of the raw taste of custard powder.
  • Now add the almond (badam) paste.
  • Let it simmer on slow till milk coats the spoon.
  • Add some nutmeg powder. Mix.
  • Finally, put off the flame.
  • Now add some chopped pistachios and almonds.
  • Lastly, bring the milkshake to room temperature and chill for 3-5 hours.
  • Serve garnished with more nuts.

What to serve

Notes

  • Use full-fat milk to make badam milkshake.
  • After adding badam paste do not boil for more than 2-3 minutes.
  • Grind the almonds very fine.
  • You can add vanilla ice cream to the milkshake for a luxurious fervour.
