Dates and Walnuts Cake  is a moist and rich with the goodness of walnuts and dates. This is an old fashioned recipe with eggs. Dates and Walnut Cake is suitable for the winter chill, or festive occasions such as Thanksgiving or Christmas Celebrations.

Ingredients
  

Ingredients:

  • 150 gm dates pitted and chopped
  • 100 gm slightly crushed walnuts
  • 100 gm refined flour (maida)
  • 100 gm unrefined cane sugar or brown sugar or refined sugar
  • 100 gm butter at room temperature
  • 2 large eggs room temperature
  • 2 tsp honey
  • 1 tsp baking powder
  • ½ tsp cinnamon powder
  • ½ tsp nutmeg powder
  • 1 tsp vanilla essence
  • 100 ml hot milk
  • a pinch Salt

Instructions
 

  • Organise the ingredients
  • Place the dates in a bowl and add hot milk. Cover and keep aside for half an hour.
  • Line a 6” baking tin with parchment paper.
  • Preheat oven to 180° C
  • In a mixing bowl, beat butter till smooth.
  • Add sugar to butter and beat till light and creamy.
  • Add the eggs one at a time and beat to a smooth mixture.
  • To this add sifted flour, baking powder and salt.
  • Also add cinnamon powder, nutmeg powder, honey and vanilla essence.
  • Gently combine everything. Do not overmix.
  • Now  fold in the dates and walnuts in the cake batter
  • Transfer the cake batter into the greased tin. Smoothen out the top and sprinkle some crushed walnuts.
  • Bake in a preheated oven at 180°C for 15 minutes then lower temperature to 160°C and bake for 35 to 40 minutes.
  • Check if cake is done by inserting a toothpick in the center, if it comes out clean, then the cake is baked.
  • Cool on a wire rack.
  • Cut and enjoy.

Notes

  1. Soaking time for dates depends on the quality of dates.
  2. Hot water can be used for soaking dates instead of hot milk.
  3. All baking ingredients must be at room temperature.
  4. Add eggs one at a time .
  5. Do not overmix the batter.
