Easy Tomato Marinara Sauce for Pasta and Pizza
Marinara sauce is made by blanching the tomatoes and simmering them with basic ingredients; that's all!! It can be made chunky or smooth.

- 500 gm whole ripe and red tomatoes. You may peel them before blanching
- 6-7 cloves large cloves garlic peeled and roughly chopped
- 1 pc small onion sliced
- 1/4 cup diced green capsicum
- 2 tbsp extra-virgin olive oil
- ½ - 1 tsp dried oregano
- ½ - 1 tsp dried thyme
- ½ - 1 tsp dried basil
- ½ tsp red pepper flakes
- ½ tsp black pepper powder
- ½ tsp to 1 tsp sugar or as needed
- salt to taste
In a medium, heavy-bottomed saucepan blanch the tomatoes and make a puree.
In another pan, warm the extra virgin olive oil over medium heat. Add onions and sauté for a while.
Then add chopped garlic and stir fry for a few minutes till fragrant and light golden in color.
Add the chopped bell peppers and sauté.
Thereafter add the spice - thyme, basil, oregano, chili flakes and salt. Sauté well for a minute.
Finally, add the tomato puree and bring to simmer.
Reduce the flame and cook till the sauce thickens.
Lastly add some black pepper powder and sugar.
Tips:
Use good quality tomatoes.
Only lightly saute the garlic.We want the aroma of garlic and not the bitterness of burnt garlic.
