Equipment

  • mixing bowl
  • spatula
  • Wok or Kadai

Ingredients
  

(1 cup = 250 ml)

  • 125 gm all-purpose flour + more for dusting
  • 30 gm sugar powdered
  • 15 gm salted butter+ a bit more
  • 10 gm milk powder
  • 75 ml milk
  • Pinch of salt
  • Water use as needed
  • ¼ tsp Instant yeast
  • ½ tsp vanilla essence
  • Oil for frying

For Decoration

  • To Dust - Mix of powdered sugar
  • To Drizzle -Melted white chocolate

Instructions
 

Make Dough and First Rise

  • Firstly, in a bowl, add lukewarm milk, sugar and yeast. Mix and keep aside for yeast to activate.
  • In another mix bowl add all-purpose flour, salt and milk powder.
  • Now add the activated yeast-sugar-milk solution to the flour and mix it well. Add vanilla essence.
  • You may continue to mix with spatula or mix with hand. Add water if needed.
  • Then add butter (keep some butter for later) and mix well to make a soft dough.
  • Now transfer onto work surface and dust with some all-purpose flour. Knead to make a smooth soft dough. Add remaining butter as needed.  
  • Form a smooth dough ball, apply oil, cover and keep it in a warm place for first proofing for 40 minutes or till dough doubles in size

Shape Donuts and Second Rise

  • After an hour when the dough has almost doubled in size punch it down to knock out air.
  • Roll out the dough to ½” thickness sheet and shape donuts with donut cutter.
  • Place them in a tray with sufficient gaps to allow them to rise. Keep them covered for 20 minutes or so. The donuts will increase in size.

Fry Donuts

  • In the meanwhile, heat oil. Fry the donuts in medium hot oil till they turn light brown on both sides.
  • Fry donuts in batches of two or three. Avoid overcrowding in the oil. Once fried let them cool.

Toppings

  • Once considerably cooled down, you might dust them with powdered sugar. Alternatively, when donuts cool down completely, drizzle streaks of melted chocolate over them.
  • Enjoy with family and friends

Notes

  • Since it is instant yeast, you could add everything directly to the flour, instead of activating the yeast.
  • Add some flour if dough is too sticky to handle.
  • Alternatively, you could bake them in a preheated oven.
