Perfect Til Chikki Delight | Til Chikki Recipe is a sweet treat to munch on in winters. It is a crispy crunchy brittle made with the wholesome goodness of roasted sesame seeds bound together with melted sugar or jaggery. Because of these health benefits and its warming nature, til chikki is a popular sweet during the winter months, especially around festive occasions like Diwali and Makar Sankranti.
Firstly, in a flat bottom pan, slightly warm the market bought roasted sesame seeds. Warming removes moisture if any, in the sesame seeds and gives it a crunchy bite. Put off flame and set aside to cool.
Grease a work counter. I usually use the kitchen top ensuring that it is perfectly clean to work. Grease it well with ghee or oil. Also grease a rolling pin. Keep parchment paper handy.
How to make Til Chikki
Now in a heavy bottom pan, take a teaspoon of ghee and heat it on medium flame. To this add 3 tbsp sugar.
Heat sugar on low to medium till it melts. You may swirl the pan or use a spatula to stir sugar so that heat dissipates in all directions and sugar melts uniformly.
When you see the sugar has started to melt though not completely, add a few drops of lime to prevent crystallization of sugar.
Gradually the lumps will dissolve, and the sugar will melt into a light golden to amber-colored syrup. This is the stage for the real action!!
Now quickly add 2 tbsp sesame seeds and combine together. Put off flame.
Immediately, transfer the mixture onto greased surface. With the help of spatula even out the sesame mixture, sprinkle a few slivers of pistachios.
Quickly, roll out the sesame mixture as thin as possible using a rolling pin before brittle turns hard. If need be, even out its round shape using a kitchen scissors. Repeat process for remaining sugar and sesame seeds.
Til Chikki Delight for celebration is ready to serve.
