Eggless Tutti Frutti Muffins are dainty and soft individual baked portions. They are moist and have a dense texture These muffins are perfect for celebrations and get-togethers. The batter for the muffins is an alchemy of flour, leavening agents, condensed milk, flax egg, oats and a handful of colourful tutti frutti.

Ingredients
  

  • 150 gm Refined flour maida
  • 4 tbsp oats
  • 300 gm condensed Milk
  • 1 tsp Baking powder
  • ½ tsp Baking soda
  • 50 gm soft salted Butter
  • 1 tsp vanilla essence OR 50:50 vanilla and orange flavor OR pineapple essence
  • 1 tbsp Flaxseed powder
  • 3 tbsp water
  • 100 ml Soda water at room temperature soda
  • ¼ cup tutti frutti or any candied fruits

Preparations

  • The first and foremost step in baking cakes and muffins is that all ingredients must be at room temperature.
  • Soak the flaxseed powder in water for 10 minutes. It will turn viscous. This is an egg replacer.
  • Dust the tutti frutti with plain flour.
  • Line a muffin pan with cup cake liner. Greasing the liners is optional. You will need 12 muffin liners.
  • Preheating too is very important in baking. Preheat oven to 180° C

Wet Ingredients

  • In a mixing bowl cream together butter and condensed milk till light and fluffy.
  • Add  soaked flax seed . Beat at high speed till well combined.
  • Then add essence and whisk again.

Mixing Dry Ingredients with Wet Ingredients

  • Now sift in refined flour, baking powder and baking soda.
  • Add the oats and mix till well combined
  • Now add the soda water and mix well using cut and fold method.
  • You may add one more tablespoon of soda water
  • Now gently fold in the candied fruit peels

Baking

  • Pour batter in greased cup liners and fill them till three-fourths.
  • Top with some more fruit peels
  • Finally, bake for 20-22 minutes at 180 °.
  • Check with toothpick test. Cool them on a wire rack and then enjoy.

Notes

  • All ingredients must be at room temperature.
  • Preheating is an important step in baking.
  • Check expiry dates of the ingredients.
  • Sift the refined flour, baking soda, and baking powder. It enhances the cake texture.
  • Fill each muffin liner up to three fourths
