After a  gratifying baking experience  with Eggless Vanilla and Chocolate Chunk Muffins and  Eggless Chocolate Muffins, I decided to experiment with some more  muffin recipes using different ingredients.

This time  I  added different  ingredients –  Flax egg, Oats and Condensed Milk for making  Eggless Spongy Vanilla Muffins,.

What is Eggless Tutti Frutti Muffin

Eggless Tutti Frutti Muffins are dainty and soft individual baked portions. They are moist and have a dense texture. These muffins are perfect for celebrations and get- togethers.  It is a quick and simple recipe. The batter for the muffins is an alchemy of  flour, leavening agents, condensed milk, flax egg,  oats and a handful of colourful tutti frutti.

Initially, I  was skeptical about the use of flaxseed in my bakes. But this recipe has removed all my inhibitions. The flaxseeds make the muffins soft and lend to its nutritive value .It makes the muffins moist and fluffy without leaving traces of flaxseed taste.

More over it has the goodness of oats too. No one would ever guess that these eggless muffins can be so delectable

This versatile recipe can also be used for eggless teacakes, frosted cakes, and for Eggless Vanilla Cupcakes Recipe. It tastes just as awesome as Dates and Walnut Cake with Eggs

Ingredients for Eggless Vanilla Cupcakes Recipe

(For measurements refer to the RECIPE CARD further below)

  • Refined flour (maida) – Also known as all-purpose flour in some countries. It is typically a bleached flour that is soft and fine.
  • Oats – Here oats enhance the texture and nutritive value of muffin.
  • Condensed Milk – Acts as an egg replacer. Make the cake moist and soft
  • Baking powder, baking soda – Leavening agents.
  • Butter – If using unsalted butter, then add a pinch of salt to the cake batter.
  • Essence  – You can use vanilla or pineapple essence. A mix of vanilla and orange essence gives a fruity flavour.
  • Flaxseed powder – Works as an egg replacer and also enhances the texture of a muffin.
  • Soda water – Use room temperature soda water
  • Candied chopped fruits– such as tutti frutti

How to make Eggless Spongy Vanilla Muffins

Preparation

The first and foremost step in baking cakes and muffins is that all ingredients must be at room temperature.

Soak the flaxseed powder in water for 10 minutes. It will turn viscous. This is an egg replacer.

Dust the tutti frutti with plain flour.

Line a muffin pan with cup cake liner. Greasing the liners is optional. You will need 12 muffin liners.

Preheating too is very important in baking. Preheat oven to 180° C

Wet Ingredients

In a mixing bowl, cream together butter and condensed milk till light and fluffy.

Add  soaked flax seed . Beat at high speed till well combined.

Then add essence and whisk again.

1 add condensed milk to butter
3 add soaked flaxsseed
5 add essence
2 whisk milk and butter
4 whisk
9 add essence and mix

Mixing Dry Ingredients with Wet Ingredients

Now sift in refined flour, baking powder and baking soda. Add to the bowl of wet ingredients.

Add the oats and mix till well combined

Then add the soda water and mix well using cut and fold method.

You may add one more tablespoon of soda water

Lastly, fold in the tutti frutti gently.

Baking

Pour batter in greased cup liners and fill them till three-fourths.

Top with some more fruit peels

Finally, bake for 20-22 minutes at 180 °.

Check with toothpick test. Cool them on a wire rack and then enjoy.

  • 150 gm Refined flour maida
  • 4 tbsp oats
  • 300 gm condensed Milk
  • 1 tsp Baking powder
  • ½ tsp Baking soda

  • 1 tsp vanilla essence OR 50:50 vanilla and orange flavor OR pineapple essence
  • 1 tbsp Flaxseed powder
  • 3 tbsp water
  • 100 ml Soda water at room temperature soda
  • ¼ cup tutti frutti or any candied fruits

FAQ

What is the difference between muffin and cup cake?

  • Both muffins and cupcakes are individual portions. Muffins have  no topping or only a simple crumb topping. but cupcakes are frosted and decorated.
  • The sponge for muffins is dense and rich with nuts, currants and fruits. For cup cakes the sponge is kept smooth and light. Batter for muffin is lumpy and solid. thicker than cup cake.
  • Mixing of ingredients for cup cakes is generally the beating  method. For muffins it is simply mixing the dry ingredients to wet ingredients.
  • Muffins are less sweet and hence can be a part of breakfast. Cupcakes are generally eaten cold as desserts. Muffins may be eaten warm or cold. They maybe sweet or savoury.

Can we bake a cake with this batter?

Yes, Bake at 180°C for 35-40 minutes in a 6″ to 7″ round tin.

Can we bake cupcakes with this batter?

Yes, you can surely bake. This batter works out for Eggless Vanilla Cupcakes Recipe too. In that case omit the tutti frutti . Lastly, decorate the cupcakes with vanilla frosting.
