Fattoush Salad Recipe with Chickpeas
This Chickpeas Fattoush Salad is an easy-to-make filling salad with greens, vegetables, proteins and a zesty vinaigrette that makes it all come together. Toasted or fried pieces of pita bread Khubz (Arabic Flatbread) goes on top to give it a nice crunch.

For Pita Bread Olive oil Pink salt Za'ater mix For Vinaigrette 2 tbsp olive oil 1-2 cloves of garlic crushed ½ tsp sumac 1 tsp Za’ater mix 1 tsp pomegranate molasses 1 Tbsp. of lemon juice Salt black pepper – adjust as per taste For Veggies 2 thin cucumber cut Into medium sized pieces 1/3 cup green capsicum chopped 1 scallions chopped A few lettuce leaves Romaine or iceberg lettuce cut into medium size pieces 5-6 cherry tomatoes ½ cup chick peas boiled Few mint leaves Few olives
Baking Pita Bread Chips Take two round pieces of pita bread.
Split open and separate them. Cut into desired sizes and shapes such as square, triangle or diamond shaped.
Combine with oil, za’ater and salt, quantities as preferred.
Spread them out into a single layer onto a baking pan.
Bake in a preheated oven at 240°C for 5-7 minutes till crisp. (Oven temperatures may slightly vary)
Cool them. Use as required and store the remaining in air tight container.
Salad dressing For the vinaigrette, take oil in a small mixing bowl.
Add crushed garlic, sumac, za’ater, pomegranate molasses, lemon juice, crushed garlic, salt, sumac, olive oil, pomegranate molasses, lemon juice, salt and black pepper powder.
Whisk until well combined.
Assemble In a big salad bowl, combine all the vegetables.
To this add the dressing/vinaigrette.
Toss everything together
Just before serving add the pita chips so that they remain crisp
Do not add all the dressing in one go. Pour some of the dressing over the salad just before serving
Wash and dry all the vegetables and greens.
Use good quality olive oil. Add the roasted pita bread just before serving
