This Chickpeas Fattoush Salad is an easy-to-make filling salad  with greens, vegetables, proteins and a zesty vinaigrette that makes it all come together. Toasted or fried pieces of pita bread Khubz (Arabic Flatbread) goes on top to give it a nice crunch.

There was a time when salad to me merely implied a platter of onions, tomatoes, carrots and cucumber with a drizzle of lemon juice. Now having spent more than twenty-five years in this Middle Eastern country, salad has taken on a new dimension for me. A realisation has dawned on me about the importance of these salads. How well these salads, such as Tabbouleh Salad, Feta Cheese Salad to name a few, complement the meats and breads at the lavish spreads of the Arabic mezze table. They put it all together to form a complete meal.

What is Chickpeas Fattoush Salad

Fattoush comes from the Arabic word fatt ‘crush/crumbs’ and the Turkic suffix of -ūsh. Fattoush means family of dishes ‘fatteh’ using leftover flatbread. It includes other herbs, greens, vegetables and vinaigrette. The vegetables are chopped into rustic medium size pieces. In essence, it is bringing together a bit of this and that. No rules! Follow your heart. Since chickpeas the protein and fiber component is a part of the salad, it makes this salad a full salad or a meal.

Ingredients

Pita chips: You can use store bought pita chips, but that is mostly fried. If you have the time, make your own.Toss sliced or torn pita in olive oil, salt and za’ater and roast until crispy.

Vegetables– Here I have used cucumbers, tomatoes, scallions, olives and bell peppers . Feel free to add or omit according to your liking. Use romaine lettuce or iceberg lettuce. Leaves– Add fresh mint leaves. You could add some parsley leaves too.

Chickpeas – Use freshly boiled chickpeas.

Pomegranate molasses – This is traditional in Fattoush salad dressing. It has a sweet sour taste and is thick and dark in colour. You can substitute with honey and lemon juice or dates syrup or pomegranate arils. If making vegan salad do not add honey.

Sumac is also essential to this Chickpea Fattoush Salad dressing. It is a dried berry powder having a tangy flavor. As a substitute, you could add a bit of extra fresh lemon zest to the dressing.

Za’ater mix/ seasoning – This is a middle eastern mixture of herbs  like oregano, thyme, and toasted spices like coriander and cumin with sesame seeds, salt  and sumac.

How to make Chickpeas Fattoush Salad

Baking Pita Bread Chips

Take two round pieces of pita bread.

Split open and separate them. Cut into desired sizes and shapes such as square, triangle or diamond shaped.

Combine with oil, za’ater and salt, quantities as preferred.

Spread them  out  into a single layer onto a baking pan.

Bake in a preheated oven at 240°C for 5-7 minutes till crisp.

Cool these baked pita bread chips . Use as required and store the remaining in air tight container.

Salad dressing

For the vinaigrette, take oil in a small mixing bowl.

Add crushed garlic, sumac, za’ater, pomegranate molasses, lemon juice, crushed garlic, salt, sumac, olive oil, pomegranate molasses, lemon juice, salt and black pepper powder.

Whisk until well combined.

Chop the vegetables into medium sized pieces.

Assemble

In a big salad bowl, combine all the vegetables.

To this add the dressing/vinaigrette.

Toss everything together

Just before serving add the pita chips so that they remain crisp

Serving Suggestions

Serve this salad along with dips such as garlic yoghurt dip , grilled meats, kababs, Crispy Falafel, kibbeh or Za’ater Cheese Manakeesh . In such case you could omit chickpeas. However if you are aiming for one bowl complete meal, I insist that you have with chickpeas. Additionally, it is a bright idea to pair this refreshing Fattoush Salad with dishes of other cuisines such as

Tips For Perfect Salad

  • Do not add all the dressing in one go. Pour some of the dressing over the salad just before serving.
  • Wash and dry all the vegetables and greens.
  • Use good quality olive oil. Add the baked pita bread just before serving.

For Pita Bread

  • Olive oil
  • Pink salt
  • Za’ater mix

For Vinaigrette

  • 2 tbsp olive oil
  • 1-2 cloves of garlic crushed
  • ½ tsp sumac
  • 1 tsp Za’ater mix
  • 1 tsp pomegranate molasses
  • 1 Tbsp. of lemon juice
  • Salt black pepper – adjust as per taste

For Veggies

  • 2 thin cucumber cut Into medium sized pieces
  • 1/3 cup green capsicum chopped
  • 1 scallions chopped
  • A few lettuce leaves Romaine or iceberg lettuce cut into medium size pieces
  • 5-6 cherry tomatoes
  • ½ cup chick peas boiled
  • Few mint leaves
  • Few olives

FAQ

How to make this salad gluten free

This Chickpeas Fattoush Salad can be made gluten free by omitting the wheat flour pita chips. Instead you could use crisps/chips made from chickpea flour, corn meal or any gluten free flour. Additionally you could just omit the chips and instead add some more crunchy veggies such as spring onions or bell peppers to make a gluten free Fattoush Salad.

Such a healthy and colourful salad. It is quite filling too. I love the flavours of the Mediterranean salad dressing that has sumac, and za’atar.

Thanks to your tip of using lemon and honey I know how I can make my Fattoush without pomegranate molasses. Also, the sumac I have been hoarding will see the light of the day! Planning on salads after Diwali so 😀
