What are Aloo Chana Dal Kababs

As evident from the name this crispy snack is made from potato and chana dal (lentils) mixture that is perked up with flavours of  garlic, ginger, fresh herbs and basic kitchen spices. Vegetarian and vegan too !! The kebabs are further dusted with sesame seeds that augment their appeal, texture and rustle up a nutty flavour.

Ingredients

Potato– Boil potatoes till just tender. Do not overcook.

Chana Dal (Lentil)– Boil till just tender. The lentils should be soft and yet retain their shape.

Herbs – Coriander and Mint leaves – Use fresh ones.

Ginger, Garlic, Green Chillies – Can use coarsely crushed or make a fine paste. These add to the flavours of the kababs. Do not use in excess.

Fennel Seeds – Roast lightly.

Lime juice – A little bit for tanginess or else you can use mango powder amchur (Indian tangy powder)

Spice Powders – Salt, coriander, red chilli, garam masala, chaat masala- Use as required

Binding agents – Roasted gram flour besan, cornflour. Breadcrumbs is another good option but then – it is not gluten free.

Sesame seeds– These are very lightly roasted.

How to make Potato Lentils Rolls

Firstly, in a mixing bowl, add potato and chana dal(lentils).

Then, add the spices – coriander powder, chilli powder, garam masala powder, chaat masala powder and salt.

Furthermore, add chopped green chillies, chopped coriander, mint leaves and ginger garlic paste.

Additionally, tip in the roasted fennel seeds. Add the roasted gram flour and cornflour.

Sprinkle a few sesame seeds. Reserve some for dusting on top.

Finally add some lime juice.

Combine everything well to form a smooth mixture dough.

Apply oil on your hands.

Take small portions of this mixture.

Shape them into cylindrical logs. Dust with sesame seeds.

Heat oil until it is warm enough.

Deep fry the kebabs till golden brown.

Tips for Best Aloo Chana Dal Kebabs

The mixture must not be soft at all otherwise it will be difficult to shape.

You can swap binding agents. Breadcrumbs are also a good option.

Before frying, the oil should reach an optimum temperature, otherwise the kebabs will split in the oil.

You can make these rolls a day ahead of gathering or party.

Ingredients
  

  • 1 big potato around 400 gm boiled till just cooked
  • ½ cup chana dal – lentils- boiled but not mushy
  • 1 tsp ginger garlic paste
  • 1 tsp fennel seeds roasted
  • Few sprigs coriander leaves chopped
  • Few mint leaves chopped
  • 1-2 green chilies chopped
  • 1 tbsp gram flour besan roasted
  • 1 tsp cornflour
  • 1-2 tbsp sesame seeds lightly roasted
  • 1 tsp coriander powder
  • ¼ tsp red chilli powder
  • ½ tsp chaat masala powder
  • ¼ tsp garam masala powder
  • 1 tsp lime juice
  • Salt to taste
  • Oil to fry

Instructions

Can Aloo Chana Dal Kebabs be shallow fried

They can be shallow fried . For this the kebabs need to be flattened a bit instead of retaining the log shape. This will make shallow frying easy.

Aloo chana dal kababs look really good. The texture is so nice and crispy with sesame seed coating. These give an additional flavour to the snack.
