Saffron Milk China Grass Pudding | Agar Agar Milk Dessert is a popular dessert in Asian homes. This refreshing milk pudding dessert is not only visually appealing but also amazingly easy to prepare.

Making China grass strips dessert had been on my to do list since a long time. What is the propelling force behind making this dessert, is not only its taste and visual appeal, but also the ease with which it can be prepared for a large group. Somehow I had not been able to achieve the desired texture. I have childhood memories of how my mom would make this dessert with perfection. With age, she has faint memories so was not able to give me exact measures.

No matter how much information is available online, yet something was amiss. After two to three trials, I found the perfect texture. Now I’ve handwritten it in my recipe diary and am sharing it in this post. This is a fail-proof recipe. Get it here!

What is Saffron Milk China Grass Pudding

China Grass Pudding, speckled with saffron strands, is a quick and easy crowd-pleasing dessert. China grass is also known as agar agar. Agar-agar is obtained from seaweed and is a plant-based thickening agent.This is a natural vegetarian substitute for gelatin. It is also used for making jellies and other desserts.

Ingredients

For Measurements refer to the RECIPE CARD further below.

  • China grass – Here I have used china grass strips
  • Milk – Use whole milk / full fat milk
  • Sweetener- Sugar works best. Alternatively, you could use condensed sweetened cream.
  • FlavoringCrushed cardamoms and few saffron strands.
  • Water
  • Garnish Almond and pistachio slivers

How To Make Agar Agar Milk Dessert

1. Firstly, take the required quantity of china grass strip (agar agar strands) Here I took 2.5 gm

2. Rinse the china grass strips twice. Then soak in water for 20 minutes.

1. Rinse and soak China grass.

3. In the meanwhile. Heat 250 ml milk and let it come to a boil.

2. Bring milk to boil.

4. When the milk comes to a boil, add crushed cardamom, saffron and sugar. Mix well. Let milk simmer for a minute. Switch off flame. Cover this saffron milk and set aside.

3. When milk boils add cardamom, saffron and sugar.

5. After 20 minutes, discard the water in which we soaked agar agar strips and add half cup fresh water. Heat this pan of water with agar agar strips. Heat on medium flame. Keep stirring so that the strips dissolve uniformly. Patience needed.

4. Heat soaked agar agar till it melts.

6. Gradually china grass strips begin to dissolve in the water.

7. In the meanwhile, bring back the flavored milk on the flame so that it very well hot when china grass is mixed into it.

8. When the strips dissolve into the simmering water, strain this water with dissolved agar agar into the flavored  hot milk. Stir for a minute or two keeping low flame. No need to boil again. Then switch off the flame.

6. Strain agar agar into milk and mix.

9. Thereafter strain this agar agar milk into a fancy dish or dessert glasses to set. Within 5-10 minutes the pudding starts to firm up, At this stage garnish with pistachio and almond slivers. By doing so, the garnish will set on the surface of the pudding.

7. Sprinkle saffron and nuts.

10. When just set, place in refrigerator for 3-4 hours at least to firm up well.

8. Chill pudding.

11. Serve as a chilled dessert.

What to serve with

You could serve alongside other desserts. Or you could serve at tea time along with some savory snacks such as Noodles Samosa or Rice Chakli with Karak Chai or Cardamom Caffe Latte.

Tips for a Perfect Agar Agar Milk Dessert

  • One can add a tablespoon of condensed milk for a rich taste. In that case, you should reduce sugar accordingly.
  • Do not heat saffron  milk with agar agar for long time after adding sugar. It may curdle.
  • Wash the agar agar strips well.
  • Do not heat  china grass (strands) agar agar on high temperature.
  • You could vary the flavors.
  • Setting options- You could set agar agar in moulds or a shallow wide dish. In the former you would have to unmould, while in later, just cut pieces  and serve.

FAQ

Maybe china grass 1} has not been heated enough or 2) the quantity is not enough or 3) quantity of milk used is more.

If the china grass pudding is moved, shaken, or stirred before it has set, it may lose its setting qualities and result in a clumpy mass that does not set.

Quantity of milk is more, or quantity of agar agar strips used is less

This is due to excess of china grass strips used or less milk used.

Yes you can. Use coconut milk instead of dairy milk. Do not boil coconut milk as it may curdle

  • 4 Dessert shot glasses
  • 2 Saucepans

Ingredients
  

1 cup =250 ml

  • 2.5 gm china grass strips
  • 250 ml milk whole milk / full fat milk
  • 2 tbsp sugar
  • 2-3 crushed cardamoms
  • Few saffron strands for flavoring and garnish
  • ½ cup water
  • Almond and pistachio slivers for garnishing

  • In the meanwhile, bring back the flavored milk to flame so that it very well hot when dissolved china grass is mixed into it.
  • When the strips dissolve into the simmering water, strain this water into the flavored hot milk.
  • Stir for a minute or two keeping low flame. No need to boil again. Then switch off the flame.
  • Thereafter strain this agar agar milk into a fancy dish or dessert glasses to set. Garnish with pistachio and almond slivers.
  • When slightly set, place in refrigerator for 3-4 hours at least.
  • Serve as a chilled dessert.
