Grilled Cheese Pita Sandwich

Equipment

Ingredients
  

  • 2 pita breads
  • ½ cup grated cheddar cheese
  • ¼ cup onions
  • 2 green chilies
  • 1 tbsp green olives sliced
  • ¼ cup bell peppers chopped
  • 1-2 tsp mayonnaise
  • 1/8 cup tomatoes chopped and with pulp removed.
  • Handful of fresh coriander leaves chopped.

Dry spices

  • black pepper
  • salt
  • ¼ tsp oregano

For Grilling

  • butter
  • grilling spray

Instructions
 

  • Firstly, heat a skillet and apply some butter.
  • Thereafter, warm the pita bread on the skillet till it puffs up.
  • In a mixing bowl, take grated cheese.
  • To this add chopped onion, chilies, chopped coriander, sliced olives and chopped bell pepper.
  • Finally, add black pepper powder, salt and oregano.
  • Now mix nicely.
  • To make the sandwich, open up each pita bread with a knife.
  • Apply mayonnaise on the one side of pita bread.
  • Fill the cheese mixture stuffing and tomato into each pita bread.
  • Bring forth the upper flap of pita and cover the cheese mixture.
  • Spray a grill pan with some cooking spray and heat it.
  • Now place the cheese pita sandwich onto the grill pan and grill it well. The cheese mixture should soften and grill marks appear.
  • Flip and grill on the other side as well.
  • Repeat for the remaining pita bread sandwich.
  • Cut into two and serve hot.

Notes

  • Use fresh pita bread. 3-4 days old pita bread will have a tendency to break into bits.
  • This would result in the cheese oozing out from the holes while the sandwich is grilled.
  • A messy scenario! You can be creative with the filling and cheese varieties.
  • The grill pan should be hot enough to melt the cheese filling and get the grill marks.
  • You may use a Panini press or sandwich maker instead of a grill pan.
