Chocolate Muffins Recipe | Eggless Chocolate Muffins

Eggless Chocolate Muffins  are quick and easy to make. They are soft  and moist. Kids just fall for these muffins. These Eggless Chocolate muffins can be baked easily with basic ingredients at home.

Ingredients
  

  • 150 gm All Purpose Flour
  • 150 gm ground brown sugar OR refined sugar
  • 2 tbsp cocoa powder
  • 1/4 cup or 60 ml milk room temperature
  • 1/4 cup or 60 ml thick Yoghurt room temperature
  • 1/3 cup oil unflavored
  • 1/4 tsp Salt
  • 1/2 tsp Baking Soda
  • 1 tsp Baking powder
  • 1 tsp vanilla essence
  • 1/2 cup hot coffee 1/2 tsp coffee mixed with 1/2 cup hot Water

Instructions
 

  • Pre-heat oven at 180 degrees Celsius.
  • Line a muffin tray with muffin liners.
  • Take a mixing bowl . To it add the refined flour(maida)
  • Sieve flour, cocoa powder, salt, baking powder, baking soda. Then add sugar.
  • Make a well in the centre and then add in this order - hot coffee, oil , milk, yoghurt and mix well but gently.
  • Do not overmix or overbeat.
  • Add vanilla essence and mix.
  • Pour batter in the muffin liners/cups.
  • You can top with choco chips or chopped nuts of your choice.
  • Bake at 180 degrees Celsius and bake for 20-25 minutes .
  • Insert a toothpick in a muffin. If it comes out clean, then your muffins are done. Do not overbake otherwise cupcakes will turn hard and tough.
  • This yields 10 to 12 cupcakes.

Notes

  1. Better to use powdered sugar.
  2. Sift the flour.
  3. Do not overbeat or overmix the batt
