Pasta and Mince Meatloaf  is a delicious and healthy dish which is liked by people of all age groups. This dish has the flavours of vegetables, eggs, minced meat and herbs.  One can use mutton mince, chicken mince or turkey mince.  This recipe can be baked or steamed. When you want to prepare something delicious for a party or special occasion then Pasta and Mince Meatloaf  is a good option for you. 
Making this meatloaf has been quite easy for me. As a child I saw my mother and now my in-laws, making this and the cut pieces somewhat resemble the ‘mithai’ pieces known as Keema Cake or Keema Pudding… From here on, I did a wee-bit tweaking, loaded some vegetables and used some locally available pine nuts and have come with the meatloaf version.

Ingredients:

  • 250 gm mutton mincemeat.
  • 2 medium onions finely chopped
  • 1 Tomato puree
  • 1/4 cup elbow macaroni
  • 2 green chillies finely chopped 
  • 1/8 cup green capsicum finely chopped
  • 1/8 cup carrot finely chopped
  • 1 teaspoon seven spice powder ( or garam masala )
  • 1 teaspoon finely chopped ginger
  • 1 teaspoon finely chopped garlic
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 2 large eggs
  • 1/2 teaspoon oregano 
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried thyme
  • 1/4 cup coriander leaves finely chopped
  • 1/4 cup cooking oil
  • 1 tablespoon coarsely crushed roasted pine nuts
  • salt to taste
  • cooking oil spray

    Method:

      1. Get organised with the ingredients.
      2. Heat oil in a pan and saute onions till light brown
      3. Then add mutton mince and a table spoon or two of water(to prevent burning).  Stir fry for ten minutes.

         

      4. Add chopped ginger, garlic and chillies. 
      5. Also add the salt and  turmeric powder,Continue to stir fry for 5-7 minutes. 
      6. Now add coriander powder , red chilli powder and garam masala powder and stir fry for five minutes. 
      7. Add tomatoes and stir fry well  for 5 minutes.

      8. In between add a little of  water till the mincemeat is cooked. This takes around 10 minutes. 

      9. Sprinkle garam masala powder on  top of the mince.Keep aside to cool . 

      10. In another wide bottom pan boil macaroni al dente.
      11. Break two eggs in another  mixing bowl. Add a pinch of salt , coriander powder, chilli powder and turmeric powder. 
      12. Combine the eggs , macaroni , carrots, capsicum and dry spices with the minced meat.
      13. Turn out the mixture into a greased and lined loaf  tin. 
      14. Sprinkle a some more bit of thyme and basil leaves and pine nuts
      15. Bake in a preheated oven at 200 degrees Celsius for 30 minutes
      16. After 30 minutes if toothpick comes out clear from the mincemeat loaf is done. 
      17. Remove from oven and let it sit for ten minutes
      18. Slice and serve hot with salsa, tomato ketchup or mayonnaise.

      Tips:

      1. You can also use soyabean granules instead of mince.
