Eggless Chocolate Brownies
Who does not love Walnut Brownies…… be it a big chunky helping or small piece, everyone falls for it. This recipe is one of my initial recipes for Brownie and is a sure shot recipe without calling for very elaborate ingredients. Before you start check the expiry dates of cocoa powder and baking powder, the yogurt should be fresh. Ignoring these facts may ruin your brownies , Brownie maybe preferred chewy or cake-like.
Ingredients:
DRY INGREDIENTS:
- 1/2 cup (70 gram) Plain flour/all purpose flour
- 1/2 cup (50 gram) unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- a pinch of salt
WET INGREDIENTS:
- 1 can (400 gram) sweetened condensed milk
- 1/2 cup unsalted butter
- 2 tablespoon thick yogurt
- 2 tablespoon sugar
- 1 teaspoon vanilla exxence
- 1/2 tablespoon instant coffee mixed with 1/4 cup hot water
- 1/4 cup more hot water if needed
- 1/2 cup chopped walnuts or any nuts
- oil for greasing
Method:
- Preheat oven to 180 degrees Celsius
- In a bowl sieve the flour, cocoa powder, baking powder, baking soda and a pinch of salt. Mix and keep aside.
- For the wet ingredients; in another bowl add the butter, condensed milk , sugar, vanilla essence. Whip all these together till mixed uniformly and creamy.
- Add the thick yogurt and blend again
- Gradually blend in the prepared dry ingredients to the wet ingredients in small portions.
- In between add the black coffee intermittently with the dry ingredients so that the ingredients combine uniformly. Add some more hot water to adjust the consistency.
- Pour the batter onto a greased baking tray.
- Bake in the preheated oven for 25 to 30 minutes.
- Check if the brownie is done when a toothpick inserted comes out clean. Remove from oven and allow brownie to cool
- Cut into pieces and enjoy.
Tips:
You can omit coffee and use only hot water to adjust consistency
