Panch Phoron Green Chili Stir Fry | Mirchi ke Tipore is a quick recipe to perk up chili flavors by stir frying them with Panch Phoron spice mix. Now you can enhance even your simplest meals using bold flavours of Green Chili With 5 Spice-Mix.
Mirchi ke Tipore is referred to in Rajasthani Cuisine. Making Mirchi ke Tipore with Panch Phoron spice mix adds an interesting dimension to this Instant Chilli Pickle.
Contrary to other spice blends, Panch Phoron spice mixture is used in its whole form. It is used for various vegetable stir fries and in gravies as well to give pickle-like flavors. It can be used whole or coarsely crushed, but never powdered. In Bengali cuisine, it’s an essential spice blend for meat, dal and veggies.

What is Panch Phoron Chili
Panch Phoron Chili is a stir fry side dish or accompaniment whereby green chilies are cut into pieces and sauteed with a Panch Phoron spice mix. Panch Phoron is a Bengali 5-spice blend that is either dry roasted or directly tempered in oil to extract its blended flavors.
In Bengali the parsing of Panch Phoran is as follows: Panch – Five; Phoron- tempering/seasoning. Literally means a tempering with five spices.
The whole spices used are cumin seeds, mustard seeds, fennel seeds, fenugreek seeds and nigella seeds. Normally, they are combined in equal parts, but to eliminate bitterness, I recommend halving the amount of fenugreek seeds.

- Whole spices – Mustard seeds ,Cumin seeds, Fennel seeds, Nigella seeds, Fenugreek seeds
- Spice powders – Salt to taste, Amchur (dried Mango powder), Coriander powder,Turmeric powder
- Regular cooking oil and/or mustard oil.
How To Make Panch Phoron Chili Stir Fry
Preparation before stir frying green chili
1. Firstly, combine together mustard seeds, cumin seeds , fennel seeds, nigella seeds and fenugreek seeds.
2. Secondly, wash and pat dry the green chilis. Cut them into half inch pieces.

3. Thirdly, heat oil in a pan. Add the panch phoron masala and let it temper.
4. Then add the chili pieces and sauté them for 2 minutes.
5. Lastly, add salt, turmeric powder, coriander powder and amchur powder.
6. Mix well so that all spices are incorporated well into the chilies.
7. Cook the chili for another 2-3 minutes. Then put off flame. The chilies should not lose their crunch.
8. Enjoy Hari Mirchi Ke Tipore with your meals or cool and store in the fridge in an airtight container. Savor in small portions with your meals. No need to heat them again before consuming.
What to serve with
Serve Panch Phoron Mirchi ke Tipore | Green Chili Stir Fry as a side dish or instant pickle alongside meals, rice or Methi Pulao or with roti and Mangodi ki Sabzi.

- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 tsp nigella seeds
