The first bite of these Oaty Nutty Quinoa Patties /Tikkis sent a burst of thrill within me. The soft quinoa seeds, the flavourful veggies and the crunch of the roasted pine nuts in these Oaty Nutty Quinoa Patties /Tikkis all form a harmonious combination. So delectable!.. I couldn’t believe it that these Oaty Nutty Quinoa Patties /Tikkis could be as tasty as the conventional tikkis that we enjoy at the snack counters.
Oaty Nutty Quinoa Patties/Tikkis  are delicious, vegetarian, blissfully packed with proteins and rich in nutrients. It is up to you to play around with the vegetables and spices. One may wonder why  I am full of praises for this recipe. Well…. it is obvious! When any recipe stimulates your taste buds and at the the same time provides you proteins, minerals and what not.. how can you back out!! Quinoa is a superfood, the vegetables used bring in the nutrients, cottage cheese paneer is a good source of calcium and protein and oats supply the fiber.
Ever since my days in the teaching profession , I have been reading a lot of quinoa as a superfood. Today I feel gratified that my family has enjoyed this quinoa preparation. I look forward to cooking more quinoa recipes and other such superfoods. This is a tested and tasted recipe and I can happily vouch for this recipe. So you too go on and try these Oaty Nutty Quinoa Patties.
 

INGREDIENTS:-

Quinoa Patties With Oats Recipe | Quinoa Veggie Patties recipe | Quinoa Recipes

 

  • 1/2 cup soaked quinoa
  • 1/2 cup finely chopped carrot
  • 1/2 cup shredded cottage cheese paneer
  • 1/2 cup finely chopped capsicum asstd colours
  • 1/2 cup finely chopped onion
  • 1/4 cup canned corn kernels
  • 1/4 cup of roasted oats powder
  • 1/4 cup coarsely chopped roasted pine nuts
  • 1-2 green chillies finely chopped
  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder/all spice powder
  • salt to taste
  • a few sprigs of chopped coriander
  • 1 teaspoon oil and more for shallow frying

Method:

  • Get organised with the ingredients.
     
  • Cook the soaked quinoa with a pinch of salt in just enough water till it is soft and fluffy. Set aside.
  • In a wide pan heat oil and add chopped onion.
     
  • Saute onions till they sweat.
  • Now add the carrots, capsicum, chillies and corn.
     
  • Finally add the cottage cheese.
  • Saute all the combined ingredients  for a few minutes .
  • Add the salt, coriander powder, red chilli powder and the garam masala/ all spice powder.
  • Saute for a few seconds. Put off flame  and let the mixture  cool.
  • Add roasted oats flour and pine nuts.
     
     
     
  • Mix nicely and form small round patties
     
     
     
  • On a skillet shallow fry the patties in small batches. Do not overcrowd . When the bottom is golden brown , flip carefully and shallow fry drizzling a few drops of oil till the other side is also golden brown and crisp.
  • Enjoy them hot with green coriander chutney or yogurt dips or spiced labneh.

 

Tips:

  • Quinoa Patties can be baked instead of shallow frying.
  • The vegetables maybe varied according to your choice.

Such healthy patties. Would love to have them any day. Taste plus nutrition combined together. I like the addition of pine nuts in them. I usually add walnuts. .
