In this recipe, the noodles are tossed with sautéed vegetables and homemade schezwan sauce made with dried chilies. Alternatively, you could use hot chili garlic sauce made with fresh red chilies for this dish.

What is Szechwan Hakka Noodles

Szechwan Hakka Noodles is a flavorful, spicy,  fiery recipe from Schezwan style Chinese Cooking.  Sichuan cuisine, also known as Szcehwan cuisine, is a Chinese style of cooking that originated in the Sichuan province of southwestern China.

Ingredients for Schezwan Hakka Noodles Recipe:

  • Hakka noodles or instant noodles
  • Vegetables such as cabbage, bell peppers, spring onions, carrots, beans.
  • Garlic ginger – chopped
  • Schezwan sauce is the key ingredient
  • Soy sauce is of Chinese origin made from fermented soya beans.
  • Salt
  • Vinegar imparts the slight tanginess
  • Regular cooking oil or sesame oil

How to make Schezwan noodles Recipe with Step by Step Pictures

For boiling noodles

  1. Cook noodles in hot water with 1 to 2 pinches of salt till al dente. Take care not to overcook.
  2. Drain the water.
  3. Add oil to the noodles and gently toss the noodles. This step prevents the noodles from sticking to each other.

For Stir frying Veggies

  1. Ideally for Chinese cooking, cut the vegetables finely into juliennes. Cut French beans diagonally.
  2. At first, heat oil in a pan or wok. Sauté chopped ginger and garlic until they change in colour.
  3. At this time, add the onions, cabbage, and French beans. Sauté on medium to high flame, stirring occasionally.
  4. Subsequently, add capsicum and carrot juliennes.
  5. Then add salt and continue to sauté on medium to high flame. Sauté for 2-3 minutes. Note that the sautéed vegetables should certainly retain their crunchiness.

Tossing Noodles with Sautéed Vegetables and Sauces

  1. Now add the noodles, vinegar, soy sauce, and schezwan sauce. Toss well.
  2. Adjust for taste, spiciness, and tanginess.
  3. Lastly, sprinkle some green parts of fresh onions.
  4. Serve hot and enjoy.

Tips for  Perfect Schezwan Noodles with Veggies

Undoubtedly the noodles must be cooked al dente

Sesame oil is highly recommended. However, you could also use a combination of sesame oil and regular cooking oil.

Vegetables such as cabbage, carrot, and bell papers have to be chopped into juliennes. Cut French beans diagonally.

In addition you could also use vegetables of your choice.

Indeed, sautéing has to be done on medium to high flame. The vegetables must retain their crunchiness. On the other hand, very soft soggy vegetables may jeopardize this Schezwan noodles recipe.  

Above all, use salt sparingly as already there is salt in soy sauce, Schezwan sauce and the boiled noodles.

Ingredients
  

For boiling noodles

  • 150 gm hakka noodles packet or instant noodles packet
  • Water to cook the noodles
  • Salt as required
  • 1-2 tsp oil to coat the noodles

For Cooking Vegetables

  • 2 cups finely chopped cabbage
  • ½ cup capsicum juliennes
  • ½ cup finely chopped beans
  • ½ cup carrot juliennes
  • 1 small sliced onion
  • ¼ cup chopped spring onions
  • Salt to taste
  • 2 tbsp oil for sautéing vegetables
  • 1-2 tbsp schezwan sauce
  • 1 tsp soy sauce
  • 1 tsp vinegar

Instructions

Neha, love Schezwan Hakka Noodles, spicy and so tasty. Haven’t made them in a long time. Quite an easy meal to put together especially if we have a good Schezwan Sauce ready at home.
