Exotic Suran Cutlet | Oal Kebab Recipe

Elephant foot yam, also known as suran, may have a dull flavor when eaten alone. Combine it skillfully with onions, herbs and other spices and transform it into an exotic kebab with enhanced flavors. Here, suran or Oal is paired with potato, a few basic spices, any dried citrus powder such as mango powder, a binding agent and kewra water for flavor.

Ingredients
  

  • 200 gm boiled Suran
  • 200 gm boiled Potato adjust according to choice
  • ¼ cup onions finely chopped
  • 1-2 pcs small green chilies chopped
  • 1 tsp ginger finely chopped
  • ¼ cup coriander leaves finely chopped
  • 1-2 tsp kewra water; optional
  • 1 tsp salt
  • ¼ tsp turmeric powder; haldi
  • 1.5 tsp coriander powder; dhania powder
  • ½ tsp red chilli powder
  • ¼ tsp chaat masala powder
  • ¼ tsp dried mango powder; amchur
  • 1-2 tbsp roasted chickpea flour; besan
  • ½ cup breadcrumbs; as required
  • Oil for frying

Instructions
 

Preparing the cutlet mixture

  • Firstly, mash or grate boiled potato and yam (suran)
  • Secondly, add onions, chilies and ginger to the mashed potato-suran mixture.
  • Thirdly, add the dry spice powders – salt, turmeric powder, coriander powder, red chili powder, dried mango powder and chaat masala.
  • Then add roasted gram flour and breadcrumbs.
  • Also add chopped coriander leaves.
  • Lastly, add the kewra water.
  • Mix everything well to form a smooth mixture

Shaping the Cutlets

  • Grease your palms.
  • Take small portions of mixture and shape into round cutlets.
  • Shape into round cutlets
  • Dust with more breadcrumbs.
  • Repeat method till all cutlets are done.

Frying

  • Now heat a little oil in a shallow frying pan.
  • Shallow fry the cutlets on medium heat on one side.
  • Flip and fry on the other side.
  • Fry till crispy and brown on both sides.
  • Drain on absorbent paper.

Serving suggestion

Notes

  • Do not over boil the suran or potatoes.
  • Keep the cut suran submerged in bowl of water to prevent it from blackening due to oxidation.
  • Variations: Can substitute roasted chickpea flour with corn flour or oats flour. Using molds, you can make heart shape or flower shaped cutlets.
