Chocolate Muffins Recipe| Eggless Chocolate Muffins are not only easy to make; they are soft and moist. Kids just fall for these muffins.
These Eggless Chocolate muffins can be baked easily with basic ingredients at home. Be sure to use good quality cocoa powder and fresh hung curd. The ingredients are mixed lightly until well combined. Chopped nuts, choc chips or some whipped cream is all that is needed for the topping. These soft and moist eggless chocolate muffins are ideal for special occasions with loved ones or for treats and tea parties. So bake and enjoy!

Ingredients for Eggless Chocolate Muffins
- All Purpose Flour
- Sugar – ground brown sugar OR refined sugar
- Cocoa powder
- Milk – room temperature
- Yoghurt – thick (room temperature)
- Oil – Alternatively you may use butter. I used oil here.
- Salt
- Baking Soda
- Baking powder
- Vanilla essence
- Coffee – hot coffee (1/2 tsp coffee mixed with 1/2 cup hot Water)
- few choco chips and cashew nuts for garnish

How to make Eggless Chocolate Muffins
1. Firstly, pre-heat oven at 180°C
2. Line a muffin tray with muffin liners.
3. Now take a mixing bowl and sieve flour, cocoa powder, salt, baking powder, baking soda into the bowl.
4. To this add sugar.
5. Make a well in the centre and then add in this order – hot coffee, oil , milk, yoghurt and mix well but gently. Do not over mix or over beat.
6. Add vanilla essence and mix.
7. Pour batter in the muffin liners/cups.
8. You can top with choco chips or chopped nuts of your choice.
9. Bake at 180 degrees Celsius and bake for 20-25 minutes .
Check test for baked cake
10. Insert a toothpick in the centre of a muffin. If it comes out clean, then cake is done.
11. Do not over bake otherwise cupcakes will turn hard and tough. This yields 10 to 12 cupcakes.
12. Let the muffin cool completely before serving.

Ingredients
- 150 gm All Purpose Flour
- 150 gm ground brown sugar OR refined sugar
- 2 tbsp cocoa powder
- 1/4 cup or 60 ml milk room temperature
- 1/4 cup or 60 ml thick Yoghurt room temperature
- 1/3 cup oil unflavored
- 1/4 tsp Salt
- 1/2 tsp Baking Soda
- 1 tsp Baking powder
- 1 tsp vanilla essence
- 1/2 cup hot coffee 1/2 tsp coffee mixed with 1/2 cup hot Water
Instructions

- Sieve flour, cocoa powder, salt, baking powder, baking soda. Then add sugar.
- Make a well in the centre and then add in this order – hot coffee, oil , milk, yoghurt and mix well but gently.
- Do not overmix or overbeat.
- Add vanilla essence and mix.
- Pour batter in the muffin liners/cups.
- You can top with choco chips or chopped nuts of your choice.
- Bake at 180 degrees Celsius and bake for 20-25 minutes .

Notes
- Better to use powdered sugar.
- Sift the flour.
