Chunky Soya in Gravy
Soya Chunks in Gravy is a delicious and protein rich recipe for the vegetarians. Soya chunks are also known as soya nuggets. They are a good source of not only proteins but also calcium and iron. Soya chunks are dry and when boiled and cooked they become spongy. They do not have a taste of their own but absorb the flavors of the gravy or curry . Hence if skillfully prepared a soya recipe can outweigh a non vegetarian menu in taste. The blanching and rinsing steps in the preparation of soya recipes are mandatory if one wants awesome tasty soya recipes.
My son who is in his pre teens, is an ardent lover of non vegetarian food. Inspite of our coaxing and advice he will never eat his vegetables without creating a turmoil at the dining table. Ingredients:
FOR SOYA/SOY CHUNKS MARINATION:
- 1 cup soya chunks blanched and drained
- 1/2 cup curd
- 1 tsp garlic paste
- 1 teaspoon salt
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1/4 teaspoon red chili powder
- 1 teaspoon coriander powder
FOR GRAVY:
- 1 large onion peeled and chopped
- 1 medium tomato chopped
- 1 green chili chopped
- 1/2″ ginger chopped
- 1/4 teaspoon salt
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1/4 teaspoon garam masala powder
- 1/4 cup oil for cooking
- a few sprigs of chopped coriander
- 1/2 to 1 cup water
Method:
FOR SOYA CHUNKS MARINATION:
- In a mixing bowl combine all the ingredients mentioned under marination with the soya chunks. Mix and set aside for an hour at least.
FOR GRAVY:
- In a cooking pot or pressure cooker heat oil and add the onions.
- Saute onions till light brown in colour.
- Add the tomatoes, ginger, green chili, turmeric powder, red chili powder, coriander powder and saute for a minute
- Add 1/2 cup water or as needed just enough to soften the onions. Cover and pressure cook for 2 whistles.
- Once pressure is released from cooker , open the cooker and mash the onions. This step will render a smooth creamy gravy
HOW TO PROCEED:
- Add the marinated soya chunks and saute for a few minutes till the water dries.
- When the oil starts oozing from sides, pour enough water to form gravy .
- Sprinkle garam masala powder and some chopped coriander leaves
- Cover and pressure cook for two whistles. Switch off gas.
- When pressure is released from cooker, turn out the soya chunks gravy into a serving bowl.
- Garnish with coriander and serve with roti or rice
Tips:
Step 5 and 6 can be omitted and straightaway soya chunks can be added to the onions. but the gravy may turn not mushy and not smooth and creamy.

Neha I am not a big fan of soya chunks but by going through your recipe I feel I would probably enjoy your soya curry. First, you’ve marinated the blanched soya chunks. So that adds flavour. Secondly the gravy looks so lovely and creamy. Bookmarked to try out during the winter months.
my husband AND kids are huge fans of soya chunks , I do make a soya manchurian for them although I don’t personally eat soya chunks. But I bet this curry would be very well received at home !
I hardly make anything with soy chunks. This looks like a perfect start. The curry will surely be loved by my family.
We are not great fans of soya chunks but your recipe where the chunks are marinated and cooked in the gravy sounds absolutely delicious. I will definitely try it will be a great way to add protein to our diet.
