Roasted Potatoes with Herbs &  Feta Cheese

Oven Roasted Potatoes with Herbs and Feta Cheese is  a quick and convenient side dish to go with any meal. The blend of the herbs offers flexibility in adjusting the quantities to suit individual’s  taste. Parboiling the potatoes decreases the roasting time and ensures that the potatoes are crisp on the outside and  creamy and soft  on the inside. Broiling for the last two to three minutes gives those charred edges to the potatoes.  Go easy with the salt in the potatoes because feta cheese too is quite salty. 
Do not let any missing ingredient in your kitchen cupboard deter you from trying this recipe. Go ahead and give it a try… even a basic combination of herbs will make these roasted potatoes standout

Ingredients:

  • 500 grams potatoes peeled and quartered
  • 4 cloves of crushed garlic
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of dried oregano 
  • 1 teaspoon of dried thyme
  • 1 teaspoon crushed black peppercorn
  • 1 teaspoon salt or as needed
  • 3-4 tablespoons of olive oil. 
  • 1-2 tablespoons of lemon juice
  • 1/2 teaspoon of crushed chilli flakes
  • 7-8 olives
  • 20 gram feta cheese 
  • a few sprigs of chopped parsley or cilantro

    Method:

    1. Parboil the potatoes  in salt water for a 10 minutes. 
    2. Once the potatoes are fork – tender, drain  the water and spread out so that the water evaporates. The potatoes should not have any water otherwise they will turn out soggy and mushy while roasting. 
    3. Preheat oven to 200 degrees Celsius
    4. In a small mixing boil mix olive oil, crushed garlic, garlic powder, oregano, thyme, a bit of  salt, black pepper, chili flakes and salt
    5. Tip in the potatoes into the mixing bowl and toss well.
    6. Spread the tossed potatoes on a hot baking tray and roast for 30-40 minutes.
    7. While roasting  toss and turn the potatoes every every 15 minutes to ensure that the potatoes are crisp throughout.
    8. Towards the later part of roasting spread a few cilantro or parsley sprigs over the potatoes and broil the potatoes to get a charred edges on potatoes. Optional step
    9. When the potatoes are done, remove from oven, wait a minute and  crumble feta cheese, some lemon juice and some  more crushed black pepper over the potatoes.
    10. Garnish the hot potatoes with parsley/cilantro leaves and olives. 
    11. Serve at once.

    Tips:

    Fresh herbs such as thyme, rosemary can be used. If broiling keep a watchful eye over the potatoes.
