Coffee Cake with Crumb Topping | Eggless Coffee Cake is a moist and egg free cake with coffee flavors as its epitome. The crumb mixture at its topping and filling gives a crunchy and grainy texture to this delicious baked treat. It makes a great snacking option or dinner dessert.
December is barely started, yet I am all over filled with overwhelming vibes of Christmas and New Year celebration. Having tried out Dates and Walnuts Cake and cakes with orange flavor earlier, the yearning for more flavors had been intense this time. I also tried Mawa Cake that had traditional flavors.
My fingers itched to do something more, akin to a magician’s sleight of hand. I have a good reason; my best friend, who currently resides in Pittsburgh, will be visiting us. It was my desire to bake a cake that just had a tint of sweetness and definitely an exotic appeal. I am glad that I planned for Home made Coffee Cake with Crumb Topping. My friend will love this Crumb Topped Coffee Cake since it has flavors of her adorable cappuccino. I am certain it will rekindle memories of our endless conversations in the college canteen while sipping on coffee.

What is Coffee Cake with Crumb Topping
Coffee Cake, this name implies to a moist and flavorful cake served alongside a cup of coffee (I would extend it to a cup of tea). The cake does not necessarily have to contain coffee. Albeit, this recipe contains coffee.
It has a soft cake base with a crumble mixture of cinnamon, walnuts and chocolate as its topping. Additionally, a ribbon of the crumb mixture runs through the middle of the cake as a filling as well giving it a contrasting texture.
You must have noticed that this crumb mixture does not contain any butter.

Ingredients
For Measurements refer to the RECIPE CARD further below.
- All purpose flour – Refined flour or maida. Sieve the flour. You could use 50:50 of whole wheat and all purpose flour.
- Yoghurt – Use fresh one
- Brown sugar – Use powdered sugar. You could swap with white refined sugar.
- Butter (salted) – If using unsalted, then add a pinch of salt to the flour.
- Leavening agents – Baking powder and baking soda
- Instant coffee powder – Can use any of your favorite coffee brands. Mix with hot water.
- Vanilla essence – optional
- Crumb topping–walnuts lightly toasted and finely chopped. brown sugar, shredded chocolate compound, cinnamon powder and a bit of all purpose flour.
How To Make Coffee Cake with Crumb Topping With Step By Step Instructions
Preparations for Baking
1. All baking recipe related ingredients to be at room temperature.
2. Grease and line 6” round tin with parchment paper.
3. Preheat oven at 180°C for 10 minutes.
How to make crumb topping
4. For crumb topping, take all purpose flour, chopped walnuts, brown sugar, shredded chocolate compound and cinnamon. Mix everything well.
Sifting Dry Ingredients
5. For the dry ingredients, in a bowl sieve all-purpose flour, baking soda and baking powder.
Wet Ingredients
6. In another bowl, beat curd and sugar powder till smooth.
7. To this add the melted butter. Mix well till creamy.
8. Also add in vanilla essence and coffee decoction.
Mix Dry and Wet ingredients
9. Now add the dry ingredients to the bowl containing curd-sugar-butter mixture. Mix well.
10. Finally pour half the batter into the greased tin.
11. Sprinkle half of the crumb topping.
12. Cover with the remaining batter .
13. Finally, sprinkle the crumb topping on the cake. Lightly tap the baking tin.
Bake Coffee Cake with Crumb Topping
14. Bake at 180°C for half an hour and then at 170°C for around 15 minutes. Insert a toothpick to check doneness. Once the cake is baked ,it leaves the sides of the baking tin. This is another way to check whether the cake is baked or not.
15. Finally, remove the baked cake from oven and cool on a wire rack for 10 minutes. Then release the sides. Serve at room temperature.
What to serve with
Serve this cake with freshly brewed Coffee, Kadak Chai or Cardamom Caffe Latte.
Tips for Perfect Coffee Cake
- Check expiry of all baking ingredients.
- Make sure oven is preheated.
- All baking ingredients must be at room temperature.
- If using unsalted butter, then add a pinch of salt to the flour.
- Spread the batter evenly to ensure uniform baking throughout. Once the batter is in the pan, tap the cake pan on a countertop to release any air bubbles in the batter.
- Do not open the oven frequently. At least the first 20-25 minutes do not open at all.
- Cool the cake before you attempt to slice it.
FAQ
Why does the cake sink in middle
Reason could be due to under baking. Since cake did not go into oven as soon as it was mixed or the oven was not preheated to a specified temperature.
Why is the cake dense
This could be because a) flour is too much or b) the batter is overmixed
Why cake is dry
Over baking or baking at high temperature could lead to a crumbly dry texture.

- 150 gm all-purpose flour maida
- 180 gm yoghurt
- 150 gm sugar
- 60 gm butter salted
- 1 tsp baking powder
- ¼ tsp baking soda heaped
- 1.5 tbsp instant coffee powder dissolved in a tbsp of hot water.
- 1 tsp vanilla essence optional
Crumb Topping
- ¼ cup walnuts lightly toasted and finely chopped (approx. 30gm)
- 1/8 cup brown sugar
- 1/8 cup chocolate compound approx. 20gm
- 1/4 tsp cinnamon powder
- ½ tbsp all purpose flour
