Although I don’t recall the specific family weddings I attended as a child in India, the indelible memories of receiving Britannia Fruit Cake in white packets linger. People would flock to such events to get a pack of this Brittania loaf cake or a bite of it.

Eggless Tutti Frutti Loaf cake is a moist and rich looking colorful tea cake embedded with candied fruits. Its soft vanilla/pineapple flavored sponge and colorful tutti frutti cannot go unnoticed.
In India,Tutti Frutti is candied fruit pieces made from papaya or rind of water melon.
Both oil as well as butter is used in this cake – Oil makes eggless cake soft and moist. Butter gives its rich flavor.

Ingredients
For Measurements refer to the RECIPE CARD further below.
- All purpose flour
- Oil – Use any unflavored oil. Oil gives a moist texture to egg free cakes.
- Butter– I have used unsalted butter. If using salted butter, omit salt in recipe
- Sugar – Powdered sugar.
- Sweet Condensed milk – Used as substitute for egg
- Milk – Warm milk for adjusting consistency of cake batter.
- Salt
- Tutti Frutti– In India, tutti frutti refers to candied raw papaya pieces or candied pieces from rind of watermelon. Use a fresh stock of tutti frutti.
- Flavorings– Here I used vanilla and pineapple essence. You could used only any one essence. Orange and mango essences too are a good option.
- Leavening agents – I have used baking powder and baking soda are the leavening agents.

How To Make Candied Fruit Cake
Preparation:
1. Line a baking tin with parchment paper.
2. Preheat oven at 180° C for 10 minutes.
3. All ingredients used in the baking process must be at room temperature unless specified.
Dry Ingredients Mixture
4. Firstly, sift purpose flour, baking powder, baking soda and salt.
5. Dust tutti frutti and nuts with some flour.
Wet mixture
6. In another mixing bowl, take condensed milk, sugar, butter and oil. Beat well. Then add vanilla and pineapple essences. Mix well using electric mixer or spatula.
Mix Dry & Wet mixture
7. Now add the dry ingredients to the above wet mixture. Add in batches mixing with spatula.
8. Add warm milk to adjust consistency.
9. Gently fold in tutti fruiti – nut mixture into the batter. Be careful not to overmix.
10. Transfer the prepared cake batter into a lined cake tin.
Bake
11. Bake at 180° C for 40 minutes. 30 minutes into baking keep a watch over the cake.
12. Remove cake from oven. Insert a toothpick in the center of cake. If it comes out clean, it means the cake is done.
13. Let cake cool down for 5 minutes. Demold it. Let it cool down further. Then slice and serve it.
What to serve with
Serve this cake with freshly brewed Coffee, Kadak Chai or Cardamom Caffe Latte.

Tips for a Perfect Tutti Frutti Cake
- When mixing together the wet mixture with dry mixture, do not go overboard. Just mix gently using cut and fold method to make a smooth cake batter.
- Check expiry dates of all ingredients especially the leavening agents.
- All the ingredients used must be at room temperature.
FAQ
Why does the cake sink in middle
Reason could be due to under baking. Since cake did not go into oven as soon as it was mixed or the oven was not preheated to a specified temperature.
Why is the cake dense
This could be because a) flour is too much or b) the batter is overmixed
Why cake is dry
Over baking or baking at high temperature could lead to a crumbly dry texture.

Ingredients
(1 cup = 250 ml)
- 150 gm all-purpose flour
- 1 tsp baking powder 4gm
- ¼ tsp baking soda 2gm
- 40 gm butter at room temperature, unsalted
- 40 gm oil unflavored
- 2 tbsp sugar powdered 25-30 gm
- 100 gm milk warm
- 20 gm cashew nuts chopped
- 100 gm tutti frutti candied fruit
- 1 pinch salt
- ½ tsp vanilla essence
- ½ tsp pineapple essence
Instructions

- Dust tutti frutti and nuts with some flour.

- Now add the dry ingredients to the above wet mixture. Add in batches mixing with spatula.
- Add warm milk to adjust consistency.
- Fold in tutti fruiti – nut mixture into the batter. and mix gently.
- Transfer the prepared cake batter into a lined cake tin.
Bake
- Bake at 180° C for 40 minutes. Watch over!
- Check doneness with toothpick test.
- Let cake cool down for 5 minutes. Demold it.
- Cool completely, then slice and serve the cake.
How to Serve
- Cut and serve with Kadak Chai or Cardamom Caffe Latte
