This fusilli pasta is a quick and flavorful pasta recipe. To prepare it, pasta is sauteed with garlic and broccoli along with chili flakes, coarsely crushed black pepper and topped with Parmesan This Garlic Parmesan Broccoli Pasta can be your favourite too.   • Pasta – I have used Fusilli pasta variety. You may use any variety of your choice
  • Broccoli – Use a fresh broccoli. Cut into small florets .
  • Parmesan cheese – has a nice flavor. You may tweak according to your preference. but Parmesan tastes superb.
  • Garlic – Freshly peel garlic for best flavors.
  • Oil – Olive oil is used here.
  • Lime – Use for zest. You may top up the pasta with some lime juice.
  • Water
  • SpicesRed chili flakes, freshly crushed black pepper, salt.

How To Make Broccoli Pasta with step by step instructions

Broccoli

1. Cut broccoli into small florets. Trim off its edges.

2. Rinse broccoli florets in water.

3. Heat water and let it boil or reach boiling point. Add salt and put off the flame. Steep the florets for 15 minutes in this hot water. If the stalks are hard, boil them for a minute and then put off flame.

Pasta

4. Heat water in a large pan or pot and let it come to a rolling boil.

5. Now add fusilli pasta and ½ teaspoon of salt.

6. Boil the pasta till al dente. Drain and drizzle ½ tbsp olive oil so that the pasta doesn’t stick to one another. Reserve a few tablespoons of water in which pasta was boiled, for later.

Garlic

7. Crush/mince/grate garlic with a garlic press or grater.

Lime

8. Zest the lime.

Preparation before making pasta

9. Now take 2 tbsp olive oil in a flat bottom pan and heat it.  

10. Add crushed garlic and sauté it until fragrant.

12. When it turns light pink, add broccoli and ¼ tsp salt. Toss and sauté over medium heat till broccoli softens a bit.

13. Now add the pasta, red chili flakes, crushed black pepper powder and zest . Stir so that the spices are incorporated uniformly with the pasta. Add around ¼ tsp salt if needed and another ½ tbsp oil.

14. Sprinkle a tbsp of Parmesan cheese, and around two tablespoons of water. Turn the flame to low. Cover and cook for 2 minutes. This step will enhance the silkiness of pasta since we are not using any sauces in this recipe.

15. Lastly squeeze some lime juice and add 1 tablespoon Parmesan cheese. You may add more if you wish. Serve hot or cold.

What to serve with

You can serve it with grilled meat such as Roasted Chicken Drumsticks , Dinner Buns or Zaater Cheese Manakish or Carrot Tomato Soup. Serve some drinks alongside such as Pineapple Mint drink , Pineapple Virgin Mojito

Tips for Perfect Cheese Pasta with Broccoli

  • Do not overcook pasta. Cook it al dente.
  • You may use any kind of pasta. I have used fusilli.
  • Saute garlic gently. Burnt garlic will make this pasta bitter.
  • Can add corn, zucchini, bell peppers, and garnish with fresh parsley or basil leaves.
  • Opt for good quality Parmesan Cheese. Any off-taste of cheese will compromise on the taste of this subtly flavored pasta.

FAQ

Omit Parmesan cheese or use vegan Parmesan cheese or nutritional yeast.

Nowadays gluten free pasta is easily available at grocery stores, buy accordingly and use it for gluten free pasta.

Just before serving, add 1-2 tbsp of pasta water while warming the pasta. This will revive silkiness and freshness to the pasta.

Ingredients

  • 1 medium broccoli 300 gm
  • 2 tbsp Parmesan cheese
  • 6 cloves garlic
  • ½ tsp black pepper crushed
  • 1/4 tsp red chili flakes
  • 2.5-3 tbsp Olive oil
  • 1 lime
  • Water to boil pasta
  • 1.5 tsp salt adjust
