Make Dough and First Rise
1. Firstly, in a bowl, add lukewarm milk, sugar and yeast. Mix and keep aside for yeast to activate. PRO TIP – Since it is instant yeast you could add everything directly to the flour, instead of activating the yeast.
2. In another mix bowl add all-purpose flour, salt and milk powder.
3. Now add the activated yeast-sugar-milk solution to the flour and mix it well. Add vanilla essence.
4. You may continue to mix with spatula or mix with hand. Add water if needed to make a sticky dough.
5. Then add butter (leave some butter for later) and mix well to and make a soft dough.
6. Now transfer onto work surface and dust with some all-purpose flour. Knead to make a smooth soft dough. Add remaining butter as needed. PRO TIP Add some flour if dough is too sticky to handle.
7.Form a smooth dough ball, apply oil, cover and keep it in a warm place for first proofing for 40 minutes or till dough doubles in size.

Shape Donuts and Second Rise
8. After an hour when the dough has almost doubled in size punch it down to knock out air.
9. Roll out the dough to ½” thickness sheet and shape donuts with donut cutter. Place them in a tray with sufficient gaps to allow them to rise. Keep them covered for 20 minutes or so. The donuts will increase in size.

Fry Donuts
10. In the meanwhile, heat oil. Fry the donuts in medium hot oil till they turn light brown on both sides. 11. Fry donuts in batches of two or three. Avoid overcrowding in the oil. Once fried let them cool. PRO TIP -Fry on medium flame and the colour should be golden brown uniformly. Alternatively, you could bake them in a preheated oven.
Toppings
12. Once considerably cooled down, dust them with powdered sugar. Alternatively, when donuts cool down completely, drizzle streaks of melted chocolate over them.

FAQ

Not using enough milk or milk powder could be a reason. Using milk instead of water gives it a rich flavor and suppleness.
Donuts have not risen
Always check expiry date on your yeast. Avoid adding yeast to hot liquids, as high heat can kill the yeast and prevent the dough from rising. Give enough time for the dough to rise.
Can I make donut dough ahead of time.
Though it is always best to make donuts the same day, but yes after the first rise you can cover the dough and place it in the fridge. The next day bring the dough to room temperature and shape it anf fry it after sometime.
Donuts split in the oil or are oily to touch.
When the oil is not hot enough , things can go wrong. The oil should be hot enough for frying. Check temperature of oil by frying a pinch of dough. If it sizzles in the oil,, you are good to go.
