This Vegan Soya Bolognese Pasta | Pasta Soyanese is a healthy and highly recommended option for vegan and vegetarian lovers. It is light and a protein-rich combo.
The sauce consists of soya granules cooked with onions and tomatoes to give a luscious thick sauce/ gravy. Vegetables such as capsicums, carrots and peas can be added to give a further kick to the nutrients content.
The venture into this recipe started as my son was growing. I wanted him to enjoy eating his food rather than just forcibly gulping down to empty off his plate.
Then this thought struck me – Why not try!! … Since then there has been no looking back.
What is Pasta with Soya Mince
For a Vegan pasta rich in proteins, soya granules are sauted with onions till a creamy reddish brown texture is achieved. This minced soya sauce is then poured on a bed of boiled pasta.
Ingredients for Pasta with Soya Mince
- Soya granules
- Fusilli (Spiral) pasta – boiled in salt water
- Onion – finely chopped
- Tomato – finely chopped
- Chili – finely chopped
- Ginger garlic paste
- Indian Spices – salt, turmeric powder, coriander powder, red chilli powder, garam masala powder
- Italian spices – Italian herbs mix
- Water or as required
- Oil – regular cooking oil and olive oil for pasta
How to make Pasta in Vegan Soya Granules Sauce
with step by step instructions
For Vegan Soya Bolognese
1. Immerse soya granules in hot water for ten minutes . Rinse and drain under running water. squeeze out water and keep aside.
2. Heat oil in a pan or pressure cooker and saute chopped onions till light brown.
3. Add the ginger garlic paste and chilies and saute for a minute.
4. Now add the soya granules and saute for a minute
5. Then tip in the salt, turmeric powder, coriander powder and chilli powder and saute for 5-7 minutes. Then add the chopped tomatoes.
6. Add water and finally sprinkle garam masala powder.
C7. over pan and cook for 20 minutes in a pan or cook for 3 whistles in a pressure cooker.
For Pasta
8. Heat olive oil in a wide pan and lightly saute the finely chopped garlic.
9. Now add the capsicum and carrot juliennes , oregano powder and Italian herb mix
10. Finally add the pasta and toss gently.
Combining Pasta with Vegan Soyanese
11. Spoon out a generous quantity of soya granules sauce over a bed of pasta. Sprinkle some scallions over the pasta Enjoy it warm.

For Soya Granules Sauce/Gravy
- 1/2 cup soya granules
- 1 pc large onion finely chopped
- 1 pc medium tomato finely chopped
- 1 pc green chilli finely chopped
- 1 tbsp ginger garlic paste
- 1 tsp salt
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/4 tsp red chilli powder
- 1/4 tsp garam masala powder
- 1 cup water or as required
- 1/4 cup oil for cooking
For Pasta
- 1/2 cup Fusilli Spiral pasta boiled in salt water
- 2 tsp olive oil
- 1 tsp finely chopped garlic
- 1/8 cup carrot juliennes
- 1/8 cup capsicum juliennes assorted colours
- 1/4 tsp oregano powder
- 1/4 tsp Italian herbs mix
Instructions
For Vegan Soya Bolognese
- Arrange and get organised with your ingredients.

- Add water and finally sprinkle garam masala powder.
- Cover pan and cook for 20 minutes in a pan or cook for 3 whistles in a pressure cooker.
For Pasta
- Heat olive oil in a wide pan and lightly saute the finely chopped garlic
- Now add the capsicum and carrot juliennes , oregano powder and Italian herb mix
- Finally add the pasta and toss gently.
Combining Pasta with Vegan Soyanese
- Spoon out a generous quantity of soya garnules sauce over a bed of pasta.
- Sprinkle some scallions over the pasta
- Enjoy it warm.
Notes
- Boil the pasta till just done.
- A bit of tomato sauce can also be added to the soya granules sauce.
- Alternatively you may add vegetable stock cubes to the soya granules sauce instead of the dry spices.
