Generally, this crumble sweet is prepared from whole wheat flour. But during winter, sometimes pearl millet flour is preferred instead of whole wheat flour.

Pearl millet and jaggery both have a warming nature so they are apt for the winter season. As pearl millet is loaded with complex carbs which are absorbed by the body slowly, it makes you feel full and prevents overeating. Similarly, jaggery too is rich in iron and is a better option over sugar.
What is Pearl Millet with Jaggery Crumble
This is a desi style crumble made by crushing rotis into small bits or even smaller. The crumble is then incorporated with ghee and hot melted jaggery.
Generally this crumble is finer as compared to the wheat flour crumble, but I prefer to keep comparatively bigger bits of them.
Ingredients for Pearl Millet with Jaggery Crumble

Pearl millet Flour Bajre ak Atta– Pearl millet flour is a high source of iron, protein, fiber etc.
Jaggery Gur– Use regular or organic jaggery.
Ghee/Oil – You could use only ghee or oil. Here I have used a combination of both.

How to make Pearl Millet Crumble Sweet at home
with images and step by step instructions
Make Dough for Crumble
Take the pearl millet flour in a mixing bowl.
Then add water little at a time to the flour and make a soft dough.
Cover and keep aside for 5 minutes.
Make Roti
Now form balls from the dough.
Heat a skillet.
Then, wet your hands and flatten each ball.
Place the partly flattened roti on the skillet and flatten it a bit more with wet hand.
Cook the roti on both sides.
Repeat for the remaining dough.
Crumble
Transfer rotis into a wide bowl and crumble them.
Mix with Jaggery
Heat ghee in a kadai or pan, add jaggery and water.
When the jaggery dissolves completely, tip in the crumble.
Work on low flame and mix the crumble well with melted jaggery.
Now put off flame. Serve hot with papad.
Tips for Pearl Millet with Jaggery Crumble
Wet your hands well to shape the roti.
You may make a fine crumble.
Serve the crumble hot.

- Almonds for garnish
- Water to make dough

Very delish bajra crumble . Loving it. I make a similar dish, where the rotis are made into a powder before adding to melted jaggery. We call it bajre ka churma. Bajra and gud are ideal food items for winters.

Neha I am sure I’ll love this bajra gur ki kutti. It reminds me so much of when my grandfather would crumble up bajre ki roti, add ghee and jaggery. He would crush it with his fingers till the jaggery get incorporated and melts. Then he would make a ladoo and give it to us. Melting the jaggery is so much simpler.
