White color – Swap potato slices with a cheese slice or grated cheese or paneer. Eggless mayonnaise may be omitted. It maybe be swapped with mayonnaise with egg. You could also use garlic sauce or Spiced Labneh
Orange layer – Swap cooked carrots with raw shredded carrots for a no-cook recipe.
Likewise you can play with more ideas for different colors.
Tips for Perfect Tricolor Sandwich
Bread must be fresh and soft.
Sandwiches should be eaten fresh as soon as they are made. But in case you have to make them an or two ahead of time, applying butter is highly recommended as it prevents the bread from getting soggy soon.
Always wrap or cover the cold sandwich with cling wrap to retain its freshness and prevent drying out of the bread.
Fillings, chutneys and sauces that go into the making of sandwich must have minimum moisture content.
It is best to trim off crust sides of the slices for neatness. Do not discard these crust sides. Toast them and make bread crumbs.

FAQ
Why cold sandwich becomes soggy
The secret for a perfect sandwich is to use minimum moisture content in the dips, spreads or sauces used. Additionally, it is always advisable to spread butter on the slices to prevent the bread from turning soggy too soon.
What kind of bread to use for sandwiches
White bread, brown bread, whole wheat , multi grain, practically any sliced bread works fine. If you ask me, for more than one layer sandwich I prefer white bread.

Tricolour sandwiches look so pretty. I’ve actually never thought of carrot on its own as a sandwich filling. Like that idea especially with the hot garlic sauce or schezwan one added to it. A quick and lovely snack or appetizer to serve for Independence Day.
Carrot does make a great filling provided the right kinds of sauces and combinations are used with it. Do try it out.
