Atte ka halwa | Halwa Prasad ,s a whole-wheat–based aromatic sweet with a rich caramel-like hue, much like kada prasad. In Northern India, Atte ka sheera is usually prepared as a religious offering in temples or festivals. It has a grainy texture and characteristic sheen from ghee.

Ingredients for Atta ka halwa

  • Whole wheat flour – atta, can be fine or coarse
  • Sugar
  • Ghee – Highly recommended. Optionally, you could use a combination of ghee and neutral flavored cooking oil.
  • Flavors -ghee, crushed cardamom
  • Water – warm water preferred
  • Almond – slivers for garnish

How to make Atte jo sheero

1. Take ghee in a heavy bottom pan or kadai and heat it slightly. PRO TIPUse ghee for maximum flavors. Alternatively, you could also use a combination of ghee and any neutral cooking oil.

2. Add whole wheat flour and sauté till flour gradually loses it rawness and changes it colour. Keep stirring on low flame.

3. Slowly, flour becomes intense in aroma and changes to a darker shade of brown.

4. At this stage, add warm water and crushed cardamoms and keep stirring continuously to avoid lumps.

5. When all the flour has mixed with water and formed a lumpy mass, add sugar and give it a mix. Cover let the halwa simmer till ghee oozes from sides.

6. Finally, garnish with almond slivers and serve warm.

1 cup = 250 ml

  • ½ cup whole wheat flour
  • ½ cup sugar
  • ½ cup ghee
  • 7-8 crushed cardamoms
  • 1.5 cup water lukewarm
  • Almond slivers for garnish

Instructions
 

  • Take ghee in a heavy bottom pan or kadai and heat it slightly.
  • Add whole wheat flour and sauté till flour gradually loses it rawness and changes it colour.
  • Keep stirring on low flame.
  • The flour becomes intense in aroma and changes to a darker shade of brown.
  • At this stage, add warm water and crushed cardamoms and keep stirring continuously to avoid lumps.
  • When all the flour has mixed with water and formed a lumpy mass, add sugar and give it a mix.
  • Cover and let the halwa simmer till water evaporates and ghee oozes from sides.
  • Garnish with almond slivers and serve warm.

Typically atte ka sheera is made from whole wheat flour. However you can made from gluten free flours such as rajgiri flour, chestnut flour or gram flour.
