During summer in Northern India, you will see vendors selling this jal jeera beverage drink in big earthen pots around which is draped a wet cloth to keep the jal jeera cool. If you are a lover of golgappe, then you will relate this refreshing lemonade taste to the pani puri water.
As a child I have enjoyed all this. But now we just cannot think of having drinks from roadside vendors as our body metabolism is delicate.This doesn’t mean that we have to give up drinking this refreshing Indian lemonade. Well, I make this appetizer drink the restaurant style, at home with fresh jal jeera ingredients. Some make this with jal jeera premix powder.
With this recipe you can make the best Jal jeera drink using a few spices and fresh herbs.
Now, Jal jeera has also found its way on the beverage menu of fine dining Indian restaurants. To be honest, whenever we dine in a Mughlai restaurant I prefer to order drinks such as Masala Boondi chhaas. Mint Lassi or Jal jeera because these go so well with Tandoori Chicken, Tangdi Kabab & Green Coriander Mint Chutney or Paneer Makhni & Veggie & Boondi Raita . I am famished, can’t go further…..
What is Jaljeera drink
The literal meaning of Jaljeera – ‘jal’ means water and ‘jeera’ means cumin. However, Jal jeera drink is more than just cumin water. It is made with Jaljira (Jal Jeera) powder comprising of cumin, ginger powder, black pepper, mint, black salt (or pink salt), some tangy fruit powder such as dried mango powder and chili or hot pepper powder.
If making fresh, then use ginger, fresh mint and coriander leaves. Use lime juice or tamarind for the zesty tangy taste. The spiciness of this drink may be moderate as compared to pani puri ka pani.

Ingredients for Jal Jeera (Jaljira)
For Measurements refer to the RECIPE CARD further below
Mint leaves– These give cooling effect to the drink. Wash and use.
Coriander leaves– Optional but recommended to give a bright green color to Jal Jeera
Fresh Ginger and Green Chili– Use minimal when making Jaljeera with fresh herbs. These two are primarily responsible for the punch and spiciness of the drink. So, try to strike a soothing balance.
Tamarind– Gives tanginess to the drink. It can be substituted with lime juice or dried mango powder. Here tamarind and a wee bit of mango powder is used.
Water– Can be substituted with soda water.
Dry spices – Fennel seeds, cumin seeds, black salt or pink salt, black pepper powder, asafetida (do not add for gluten free), chaat masala, and sugar (optional). I substituted sugar with a bit of sweet tamarind sauce. These spices balance the heat and coolness of jaljeera.
Boondi – Small fried globules of chickpea batter. It increases the aesthetic appeal and a creates a feel while youdrink. You may use plain boondi or masala boondi.
Sugar or sweet tamarind chutney – optional
Water – You may substitute with soda water for mojito.

How to make Jaljeera Drink At Home
with images and step by step instructions
Firstly, strain tamarind water.
Then, in a mixer jar blend together tamarind water, mint leaves, coriander leaves, chili, ginger, fennel seeds, cumin seeds, chaat masala, black salt or pink salt, black pepper powder, asafetida and a cup of water.
Then strain the blended jal jeera. Add some more water to the concentrated jal jeera drink.
You may add sugar or sweet tamarind sauce or honey.
Adjust for taste.
Cool in the refrigerator for half an hour at least.
How to serve Jaljeera Drink
When cooled stir the jal jeera and pour in glasses.
Add some masala boondi on top and enjoy.
Serve jal jeera as a welcome drink.
As an appetizer, you may serve in shot glass topped with a pani puri shell.
You can use this jal jeera for pani puri water.
Alongside you could have Crispy Aloo Tikki Chaat or Dahi vada Chaat
Tips for Perfect Jal Jeera Drink
Serve chilled drink.
Control the spice level as per individual palate taste.
To make mojito, you can replace adding water with soda water.
For a slight sweet taste, you may add some sugar. I added sweet tamarind sauce since I had some stocked.

Jaljeera with Fresh Herbs | Jaljira Imli Drink
Ingredients
- 1 pc walnut size ball of seedless tamarind or tamarind pulp imli soaked in water
- 2 tsp cumin seeds jeera powder
- 2 tsp fennel seed saunf
- 1-2 tsp chopped ginger or dry ginger powder saunth
- ½ cup loosely packed fresh mint leaves pudina leaves for dry mint
- ½ cup coriander leaves dhaniya patta
- ½ to 1 tsp chat masala as required
- ½ to 1 tsp black salt or pink salt
- ½ to 1 tsp black pepper powder
- 1 pinch of asafetida – omit for gluten free
- 1 tsp sugar or honey or sweet imli sauce optional
- 3-4 cups water
- ¼ cup of gram flour pearls boondi for topping
Instructions
- Firstly, strain tamarind water.
- Then, in a mixer jar blend together tamarind water, mint leaves, coriander leaves, chili, ginger, fennel seeds, cumin seeds, chaat masala, black salt or pink salt, black pepper powder, asafetida and a cup of water.
- Strain Tamarind (Imli) Water
- Add the fresh herbs and spices
- Add water and blend
- Then strain the blended jal jeera. Add some more water to the concentrated jal jeera drink.
- You may add sugar or sweet tamarind sauce or honey.
- Adjust for taste.
- Cool in the refrigerator for half an hour at least
How to serve Jaljeera Drink
