Soft and Moist Apple Black Currant Muffins | Apple Sukhe False Ke Muffins will not leave you without indulging into them. Each bite will leave lingering flavors in your mouth. Well, my family was bored of eating apples as a daily ritual just because it was a healthy fruit. As a result, I was frantic to break this fruit monotony.
Fortunately, there has always been a wide range of breakfast recipes on our menu to choose from such as Methi Lehsun Paratha, Schezwan Paneer Paratha, Za’ater Cheese Manakish, Paneer Frankie, Veggie Stuffed Homemade Buns or Sindhi Koki.
One fine morning, as I gazed at the apples on the counter top and black currants besides them, my mind went reeling for what to prepare for breakfast. Several recipe ideas with apples and black currants popped into my head. I knew these flavors combo would never go wrong. So finally, I settled for baking this flavorful Apple Blackcurrant Cupcakes Recipe.
What is Apple Black Currants Muffins
Muffins are small sized individual tea cake portions. These Apple Black Currant Muffins are bursting with flavors of apples and black currants. They are ideal breakfast muffins rich and wholesome without frosting. That’s what I like most about muffins! One can never go wrong with this combination to produce moist and devouring muffins. The apples and dried black currants go well with the vanilla flavor.
Ingredients for Apple Blackcurrants Muffins
For Measurements refer to the RECIPE CARD further below
- All-purpose flour– Use sifted flour.
- Sugar –Use powdered sugar. You may use refined sugar OR cane sugar OR brown sugar.
- Apples– You can use the green apples such as Granny Smith or red Gala apples. In fact any variety that is tart and crisp will be fine. I prefer to chop them finely instead of grating.
- Milk – At room temperature.
- Butter – At room temperature and melted. May be salted or unsalted.
- Eggs– At room temperature and large size.
- Baking powder – Use leveled measurements. Check expiry date.
- Salt – Just a pinch needed. Omit if using salted butter.
- Vanilla essence- For flavor
- Blackcurrants– In this recipe dried black currants are used.

Preparations
Peel and finely chop the apples
Dust black currants with some all-purpose flour.
Preheat oven at 170° C for 10 minutes.
Sifting dry ingredients
In a wide bowl sift in all-purpose flour, salt and baking powder.
Mixing wet ingredients
Take another mixing bowl, whisk egg until frothy.
To this add melted butter and sugar and half of the milk. Mix well.
Mixing dry with wet ingredients
Now add the dry ingredients to the wet in two parts. First, add half portion of the all-purpose flour mixture and whisk till smooth.
Now add the remaining part of all-purpose flour mixture, milk and vanilla essence. Mix using cut and fold method.
Do not over mix.
Finally fold in the chopped apples and blackcurrants. Lightly mix. The batter mixture will be lumpy.
Baking
Finally divide batter into 6-8 cupcakes liners. Top with some more black currants and chopped walnuts.
Bake at 170°C in preheated oven for 30 minutes.
Cool and serve
Allow to cool for 10 minutes before removing from the muffin tin.
Storage
Store at room temperature. Stay good outside for 2-3 days in pleasant weather conditions.
Do not refrigerate as the texture of muffin becomes stodgier.
Tips for Perfect Black Currant Muffins
Do not omit sifting the dry ingredients.
You may also grate apples instead of chopping. Do not squeeze out the juice.
You could also add a generous pinch of cinnamon to the muffin batter to enhance flavors.

- 75 gm peeled and chopped apple use any green or red variety of apples

Can oil be used instead of butter in muffins?
Yes, you can. The argument for using oil in muffins is that they are lighter and have comparatively longer shelf life. On the other hand, butter muffins are dense and stay good for just 2-3 days under pleasant weather conditions. Yet, if you are asking which one tastes better, the answer will undoubtedly be butter.
Which apples are used in baking muffins
Granny Smith green variety, red Gala variety or any variety of apples that is tart and crisp will suffice.
Can fresh or frozen blackcurrants be used
Substitute dried blackcurrants with fresh or frozen. Do not thaw frozen blackcurrants. Just use them right away.
