Gluten free Pearl Millet Flatbread with Fresh Herbs | Bajri Methi Jo Dodo is a go-for recipe to celebrate this International Year of Millets- 2023. It is a gluten-free breakfast or lunch for winters when there are fresh greens in abundance. The benefits of Pearl Millets and greens are so apparent that they have metamorphosed into  similar recipes across the country.

What is Bajri Methi Jo Dodo

This is typically a healthy Sindhi breakfast recipe. Fresh herbs and spices are mixed with pearl millet flour. With the help of water all the contents come together to form a dough. Small portions of the dough are then shaped into flatbread between the palms.

Fenugreek Millet Flatbread is protein rich, fibrous and a good source of calcium, iron and phosphorus. This flour is gluten free. The nutritional content of this flatbread is best experienced when it is paired with coriander chutney, lassi, or yoghurt. This pearl millet flatbread or roti is different from other rotis because it is not rolled to obtain its circular shape. Instead each flatbread is shaped by hand.

This flatbread recipe is known as Bajri Methi jo Dodo in Sindhi Cuisine. In Gujarati Cuisine similar flatbread go by the names Bajra Methi Dhebra. Akin version in Marathi Cuisine is known as Methi Bajra Thalipeeth.

Bajra Gur ki Kutti is another winter delicacy that one can try. It makes a great warm up food.

Ingredients for Methi Bajra Roti

Millet flatbread ingredients

  • Pearl Millet flourBajra atta. This is a gluten free flour. Readily available at the stores.
  • Fenugreek leaves – Methi leaves. Mandatory. Clean and pick the leaves carefully and rinse them.
  • Spring onions chopped – Optional. It greatly enhances flavors of the flatbread.
  • Fresh green garlic chopped – highly recommended. Avoid if not available.
  • Garlic – is a good substitute for fresh garlic leaves
  • Green chili – chopped or crushed
  • Turmeric powder – optional
  • Salt – as needed
  • Oil – a bit for the dough and some for applying on the flatbread
  • Water – for making dough

How to make Pearl Millet Flatbread with Fresh Herbs

Dough preparation

Firstly, In a mixing bowl add bajra flour(pearl millet flour)

To this add fenugreek leaves, spring onions, fresh green garlic (if using), chilis, regular garlic paste or grated, salt and turmeric powder.

Add ½ tsp oil to the above flour.

Now gently mix everything.

Then, gradually add water and let the dough come together. It will be slightly soft.

Form Dough

Making the flatbread

Heat a griddle or skillet.

Grease your palms with oil.

Take a portion of the dough and gently flatten and shape into round flat discs halfway.

Now carefully place the flour disc/ roti onto the griddle and with wet hands further flatten this roti/disc till thin. Must work with quick hands for this step.

Let the roti cook on one side.

Flip and roast on other side.

Brush some oil on the roti surface.

Finally when the roti is cooked remove from griddle.

Repeat for the remaining rotis/ flatbread.

Serve hot with Green Coriander Mint Chutney, plain curd , Veggie & Boondi Raita or immunity boosting Instant Raw Turmeric Pickle

Tips for Perfect Bajri Methi jo Dodo

Flatten and shape the flatbread using water. Work with quick hands.

Cook on moderate flame.

Tastes best when eaten warm.

Ingredients

  • 2-3 green chili chopped.

What is the best time to eat Bajri Methi jo Dodo

Should be eaten in winters. Pearl Millet has a warming effect. It gives a fuller feeling for a longer time . H’ence preferred for breakfast or lunch.

Can Pearl Millet Flatbread be rolled with a rolling pin

Generally such flat breads are made by hand. However if you do want to roll it out, then mix some wheat flour as well and place a plastic film on the portion of dough to help in smoothly rolling out without sticking to the rolling pin.
