What is Beetroot Cutlet | Beetroot Tikki
The main ingredients are potatoes, beetroots, some vegetables and spices. The robust red colour of the Beetroot and Potato Cutlets is definitely because of the beetroot. These Beetroot Tikkis or Cutlets can be made very easily at home. Veggies give a texture and go well with the natural sweetness of the beetroots.

- Beetroot – Boiled and grated
- Potato – Boiled and grated
- Vegetables & aromatics– Finely chopped onions, French beans, carrots, capsicum, ginger, garlic, green chili coriander leaves.
- Spice powder – coriander powder, red chilli powder, cumin powder, amchur powder (dried mango powder), chat masala powder, salt to taste
- Binding agents –Roasted besan (gram flour), breadcrumbs
- Slurry – all-purpose flour, water and breadcrumbs
- Oil – for shallow frying

How To Make Beetroot Cutlet
1. Firstly, heat a tablespoon of oil in a kadai or pan.
2. Add ginger garlic and add onions to it. Sauté on medium flame.
3. After a few seconds add chopped carrot, beans, capsicum, and salt. Sauté till the liquids dry from the veggies. Then, turn off the heat and let mixture cool.
4. Now in a mixing bowl add boiled potatoes, beetroot, sautéed vegetables, chopped chillies, chopped coriander, salt, coriander powder, chilli powder, amchur powder, chat masala powder, cumin powder, roasted gram flour and bread crumbs.
5. Combine well so that all the ingredients are mixed.
6. Make balls and shape into round patties/cutlets.You could use molds for fancy shapes.
7. Slurry: Prepare a slurry using refined flour and water. Dip each patty in the slurry and coat with breadcrumbs and place on a greased plate. Dipping in slurry is a sure-shot step that the cutlets will not split in oil when deep frying. Since here, we are shallow frying, so let’s keep this step optional. In that case, you could just coat the tikki with breadcrumbs and proceed to next step.
8. Shallow fry the cutlets. Drain on absorbent paper. Serve with tomato ketchup or coriander chutney.
What to serve with
Serve with tomato ketchup or Coriander Mint Chutney or Hot Chili Garlic Chutney. Enjoy with freshly brewed Coffee, Kadak Chai or Cardamom Caffe Latte.
Tips for Perfect Beetroot Tikki
- Do not over boil potato or beetroot.
- Squeeze water from the grated beetroot very well.
- You can use these cutlets for burger.
- You could customize the combination of veggies according to family choice. Make sure at least you use potato with beetroot if not using any other vegetable.
- Adjust spice levels according to one’s family palate.

Cutlet mixture has turned out soft. How to salvage it
To some extent you can salvage it by adding 1 or 2 tablespoon of breadcrumbs. Alternatively you could add some cornfour ,roasted gram flour or poha powder. Some combination will surely work.
Variations for Beetroot Patties
Potato and beetroot alongwith basic spices and binding is a must. Thereon, one can add only carrots, or bell peppers, onions, yam.. Whatever you use, it certainly must be squeezed to remove water as any excess moisture will create a mushy texture. We are looking at tikkis that are firm and have a bite.

Ingredients
- 200 gm beetroot boiled and grated
- 200 gm potato boiled and grated
- ½ cup onions finely chopped
- ½ cup French beans finely cut
- ½ cup carrots finely chopped
- ½ cup capsicum finely chopped
- 1 tsp ginger finely chopped
- 1 tsp garlic finely chopped
- 1 green chilli chopped
- 1 tbsp coriander leaves
- 1 tsp coriander powder
- ¼ tsp red chilli powder
- ½ tsp cumin powder
- ¼ tsp amchur powder dried mango powder
- ½ tsp chat masala powder
- salt to taste
- 1 tbsp roasted besan gram flour
- ¼ cup breadcrumbs + more for coating
- Oil for shallow frying

Your beetroot cutlets reminded me off my mom . She would make these yummy vegetable loaded cutlet and shape them as hearts . We also had a cutlet mould to make heart shaped cutlet . These tikkis are so yummy and delicious to serve as tea time snacks or even as appetizer for a get together.

Neha, I have a question: How do you boil the beetroot and potatoes? I have always pressure-cooked them but realized there is a better way. Thanks in advance.
Archana, I boil beetroots in a pressure cooker, if they are of a smaller size I boil in open pot. until they’re tender enough for a bite, careful not to overcook them. For potatoes, sometimes I boil in open pot, or steam them whole, on an idli stand in a steamer, or similar setup. Finally, drain the water and gently press the potatoes or beetroots between kitchen towel papers to remove excess moisture. Hope this helps. I will add this as FAQ, for the convenience of my readers.
