This Dates Cake Recipe | Dates and Walnut Cake is suitable for the winter chill. It is also perfect for the Thanksgiving or Christmas Celebration. The moist Dates Cake bursts with goodness of walnuts and dates. This is an old fashioned recipe with eggs and has been tried and tested many times. Ingredients
- dates pitted and chopped- do not use soft dates. if very hard they soaking time in hot milk/water will have to be increased.
- slightly crushed walnuts
- refined flour (maida)
- unrefined cane sugar or brown sugar or refined sugar
- butter at room temperature- If using salted butter, then omit the extra pinch.
- large eggs (room temperature)
- honey
- baking powder – check it expiry date. Use level teaspoon not heaped.
- cinnamon powder –
- nutmeg powder
- vanilla essence – you can substitute vanilla extract
- hot milk – Substitute with hot water for vegan version
- Salt a pinch
Method:
- Get organized.
- Place the dates in a bowl and add hot milk. Cover and keep aside for half an hour.
- Line a 6” baking tin with parchment paper.
- Preheat oven to 180° C
- In a mixing bowl, beat butter till smooth.
- Add sugar to butter and beat till light and creamy.
- Add the eggs one at a time and beat to a smooth mixture.
- To this add sifted flour, baking powder and salt.
- Also add cinnamon powder, nutmeg powder, honey and vanilla essence.
- Gently combine everything. Do not over mix.
- Now fold in the dates and walnuts in the cake batter
- Transfer the cake batter into the greased tin. Smoothen out the top and sprinkle some crushed walnuts.
- Bake in a preheated oven at 180°C for 15 minutes then lower temperature to 160°C and bake for 35 to 40 minutes.
- Check if cake is done by inserting a toothpick in the center, if it comes out clean, then the cake is baked.
- Cool on a wire rack.
- Cut and enjoy.

Notes
- Soaking time for dates depends on the quality of dates.
- Hot water can be used for soaking dates instead of hot milk.
- All baking ingredients must be at room temperature.
