Fried Meetha Chautha is made during the festive Shravan month. It is one of the sweet treats made for Thadri/ Satayain festival. Invariably, festivals and sweets go hand in hand. The month of Shrawan coincides mostly with August month in the Gregorian calender. As this month approaches ladies of house set into action for the festivities.

Sindhi community mostly celebrates this Thadri – Satayain festival. The highlight of it is making food a day prior to the festival. No cooking is done on the day of the festival. People relish the sweets and savories that are made ahead.

What is Sweet Chautha or Chotha

Sweet Chautha is a fried sweet flatbread . It is golden brown on the outer side with subtle flavors of crushed cardamom. Customarily it is either made in round shapes ‘tikki’ or quarters ‘chautha‘. In today’s times, cookie cutters are used to give fancy shapes to these fried snack. This is very much similar to mitho lolo; the difference being that all purpose flour is used and this is fried.

Meetha Chautha are made a day or two ahead of festival. These are then distributed and consumed on the day of Thadri/Satayain festival. Other treats made for Satayain festival are:

Ingredients

  • Flour – Traditionally, all purpose flour is used. But one may use a combination of whole wheat flour and all -purpose flour.
  • Sugar– powdered sugar saves on the time for making a sugar solution.
  • Water– It helps to dissolve sugar.
  • Ghee– Used as shortening. Alternatively, oil could be used.
  • Oil – needed for frying
  • Cardamom – for flavoring

How to make Sweet Tikki

with step by step instructions

Sugar syrup

Add enough water to cover the sugar. Mix well and keep aside for an hour. Alternatively, you could heat the sugar water mixture on low flame till sugar dissolves. In that case wait for the sugar syrup to cool before using it.

Making dough

Now in a mixing bowl take both flours.

To this add ghee or oil gradually to make a crumbly textured flour.

Then add the sugar syrup and form a firm dough

Make equal sized balls from this dough. Keep covered.

Shaping & Frying

Roll out one ball to ¼” thickness.

Then cut into quarters.

Heat oil in a karahi and fry chautha on low medium.

Fry till golden brown and drain on absorbent paper.

Once cooled down store in airtight container.

Tips for perfect Fried Sweet Tikki

Go slow with shortening ‘moyan‘. Add ghee or oil gradually to the flour. If shortening is excess, then the Chautha may split in the oil.

Fry on medium flame to cook Chautha from the inner sides.

Make sure to knead a firm dough.

It has subtle flavors of cardamom and is crisp on the outside. Customarily it is either made in round shapes ‘tikki’ or quarters ‘chautha’. In today’s times, cookie cutters are used to give fancy shapes to these fried snack.

Ingredients
  

  • 1 cup whole wheat flour atta
  • 1 cup all-purpose flour maida
  • ¼ cup melted ghee
  • 1 tsp crushed cardamom
  • Oil for frying

Can any other flour be used for making sweet tikki

Use either all purpose flour or a combination of equal parts of all purpose flour and whole wheat flour.

Why does the tikki break in oil

Oil is not hot enough

Too much shortening ‘moyan’ is used

What other variations

With a cookie cutter, you can make different shapes.

One can add sesame seeds while kneading.

Instead of cutting into quarters, one can roll out thick round discs.
