What is Mawa Kulfi

Kulfi is a traditional Indian ice cream. This luscious creamy kulfi is made from mixture of milk that is boiled and reduced till thick, evaporated milk solids (mawa also called khoya), sugar, cardamom, saffron and crushed nuts. It is mostly conical in shape and maybe served on a stick or in earthenware cup.

Nowadays shortcuts are there to yield equally good textures as the traditional mawa kulfi.

Ingredients

Milk – Use full fat cream

Mawa – Evaporated milk solids. Must be fresh. Grate the mawa. Can use homemade or bought from market.

Sugar

Milk powder

Fresh thick cream – Use good quality.

Mixed nuts powder – Such as almonds and pistachios

Cardamoms – Crush it and use for flavors.

Saffron – a few strands for flavor.

Kulfi mixture preparation

Firstly, pour full cream milk into a pan.

Add milk powder to the milk and heat it on medium flame. Stir continuously to avoid lumps.

When bubbles arise from the sides add crushed cardamoms or cardamom powder and saffron.

Heat milk and stir continuously.

Let the milk boil. Don’t leave unattended.

Scrape the sides of the pan from time to time and drop the milk scrapings back into the milk.

Let milk boil and thicken.

When the milk is reduced to nearly half, add cream and mix.

Then add mawa and stir.

Keep stirring. Let milk simmer and thicken.

Continue to boil the milk for 1-2 minutes.

Now add sugar and simmer on low.

Scrape the sides.

Lastly add the nuts powder and switch off flame.

Keep aside to cool.

Set Mawa Kulfi

When the reduced milk is at room temperature, pour them into conical kulfi moulds.

Secure the moulds with their covers and place them in the freezer at least overnight.

How to Demould Kulfi from the Kulfi moulds

Place the kulfi moulds in a bowl of water for a few seconds.

Open their cover.

With a knife gently run around the kulfi and then slide the kulfi onto the place.

Another way to demould kulfi is to rub the kufi mould between both palms. By doing so , heat from hands is transferred to the mould . This loosens the kulfi from the sides and helps in releasing the kulfi.

How to serve

Demould kulfi. Serve it on the kulfi stick or cut into pieces.

Sprinkle a few chopped nuts.

Tips for Perfect Kulfi recipe with Mawa

Use full cream milk.

Reduce the milk till thick. If the milk is not reduced enough then maybe crystals can form.

Use good quality mawa. I prefer homemade mawa

  • 50 gm sugar
  • 1 tbsp milk powder
  • 2 tbsp fresh cream
  • 1 tbsp mixed nuts powder
  • 4 pcs cardamoms crushed
  • few strands saffron

  • Switch off flame
  • Keep aside to cool.

Set the Kulfi

  • When the reduced milk is at room temperature, pour them into conical kulfi moulds.
  • Secure kulfi moulds with their covers and place them in the freezer at least overnight.

Ingredients: 1/2 cup milk powder, 1/4 cup full cream milk and 1 tbsp butter. Heat butter in a pan. Add milk and milk powder. Mix continuously. When mixture thickens and leaves the sides of the pan, put off the flame. Allow to cool.
