Quinoa Stir Fry with Veggies | Vegetable and Quinoa Stir fry |Quinoa Pilaf | How to cook Quinoa with vegetables with step by step instructions
In my quest to create healthy quinoa dishes, vegetable and quinoa stir fry has proven to be another favorite dish. After cooking this super food for a couple of times, now it is a total breeze.
Before this earnest endeavor of mine , I had prepared a Quinoa Tabbouleh Salad which is another variation of Tabbouleh with Pomegranate Salad . Although it was fine then, but couldn’t get beyond that.The matter stopped there!
Recently I again set out to prepare some healthy recipes with this much talked about and trending quinoa. I made Quinoa Oats and Nuts Patties followed by this post. Both recipes have justified the much talked about super food.
Nutritionally, Quinoa has a very high-protein content. This makes it a great cholesterol-free and low-fat source of protein for vegans and vegetarians. It is also a good source of iron and magnesium. Above all, it is a gluten-free food.

What is Quinoa Stir Fry with Veggies
A look alike of pilaf, boiled quinoa is stir fried with veggies and spices to perk up a one pot healthy meal. The pine nuts and veggies give it a great crunch. The nutty taste of quinoa and flavors infused from the spices form a great treat. This can be served as a warm salad, a pilaf or as a side dish as well.
To enjoy any preparation with quinoa , points to bear in mind are-
- Soak quinoa for at least two hours or overnight
- Rinse quinoa very well to remove toxins such as saponin
- When cooked the quinoa should be fluffed up and not be mushy.

Tabbouleh with Pomegranate Salad
Ingredients:
- Quinoa – Select a good organic brand of quinoa. I have used the white variety. Rinse and soak for at least two hours or overnight.
- Onions, garlic, green chili – Finely chop them.
- Veggies – Assorted color bell peppers, , canned corn kernels, chopped carrots – Finely chop them.
- Pine nuts – Dry roasted and chopped
- Dry spices – coriander powder, turmeric powder, red chili powder, garam masala powder or all spice powder (optional), salt to taste
- a few sprigs of chopped coriander– for garnish
- Oil

How to make Quinoa Stir Fry with Veggies
Cook the soaked and rinsed quinoa with a pinch of salt in just enough water till it is soft and fluffy. Set aside.
In another pan heat two teaspoons of oil .
Add the garlic to the oil and saute it till garlic turns light pink.
Now add in the chopped onions and saute for a minute till onions sweat.
Then add the vegetables – carrots, capsicums, green chillies and corn .
Stir gently and continue to stir fry for 2-3 minutes
Then add the salt and other dry spices.
Gently stir and saute for two minutes .
Now add the boiled quinoa into the vegetables and stir gently till nicely combined.
Stir fry for two minutes more.
Garnish with coriander. Now you are ready with your healthy Quinoa Stir Fry with Vegetables 🙂
Tips for Perfect Quinoa Pilaf:
- Rinse Quinoa and soak well so that the seeds swell.
- You may use vegetables or cooked meats of your choice.

- How to cook Quinoa
- 1/2 cup quinoa soaked for 2-3 hours
- Salt as needed
- Water to cook quinoa
- 1 tsp Oil
- Stir Quinoa with Veggies
- 1/2 cup finely chopped onions
- 2 cloves of chopped garlic
- 1/2 cup green capsicum can use asstd colours too
- 1/2 cup canned corn kernels
- 1/2 cup finely chopped carrots
- 1/4 cup coarsely chopped roasted pine nuts
- 2 green chilies finely chopped
- 1 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chilli powder
- 1/4 teaspoon garam masala powder/all spice powder
- salt to taste
- a few sprigs of chopped coriander
- 2-3 teaspoon cooking oil
