Til Ki Burfi | Sesame Seeds Sweet is a traditional Indian sweet made during winter months and marks the celebration of Makar Sankranti festival. Til Ki Burfi With Milk Powder is quick and easy to make.

Various names of Makar Sankranti

Makar Sankranti marks the transition of the sun around 14th January every year from the zodiac sign Dhanu (Sagittarius) to Makar (Capricorn). This festival is also celebrated as a harvest festival across the country. It marks an end of winter season and beginning of spring.

Makar Sankranti in India is known by several names such as Pongal, Lohri, Bihu, and Maghi.

Few of its other Indian names being Sankranti or Uttarayana Sankranti; Sakrat in Haryana, Pongal in Tamil Nadu, Ghughuti in Uttarakhand, Maghi Sangrand in Punjab, Maghi Sangrand or Uttarain (Uttarayana) in Jammu.

This festival is also celebrated in Nepal, Cambodia , Thailand and Myanmar.

Importance of Sesame seeds

Sesame seeds have a warming effect on the body and so it is good to consume in winters. They play an important role during season change.

Til (sesame seeds) according to Ayurvedic medicine nourishes the body and promotes overall health. These tiny seeds are believed to be blessed and hence known as seeds of immortality. (Source: indiatimes) One of the traditional customs during Makar Sankranti festival is to donate, consume or use sesame seeds.

So it is auspicious to prepare recipes such as Til ke laddu, Til ki Burfi, Til Patti, Til Mawa Gajak with sesame seeds during this time.

What is Til Ki Burfi | Sesame Seeds Sweet

Til ki burfi is a traditional Indian sweet made from sesame seeds. This til ki burfi recipe is prepared from sesame seeds, milk powder and sugar. It is a  delicious sesame seeds  burfi recipe which makes a perfect sweet or dessert for any festival or special occasion. Til burfi is ideal in winters. More so  it is also associated with the Makar Sakranti festival. This time make this stellar preparation yourself at home.

Ingredients for Sesame seeds Fudge

  • Milk and Milk Powder
  • Sugar
  • Sesame seeds (til)
  • Butter – You may use ghee.
  • Cardamom powder – For flavor
  • A few chopped nuts – For garnish

How to make Til ki Burfi with step by step instructions

1. Firstly, lightly roast the sesame seeds. 

1. Roast sesame seeds.

2. Lightly blitz half quantity of roasted seeds. The remaining quantity keep them whole.

3. Then in a pan, melt butter. Add milk and milk powder.

2. Melt butter. Add milk & milk powder.

4. Stir continuously to avoid formation of lumps.

3. Mix well on low heat.

5. After sometime add sugar also.

5. Add sugar.

6. Once sugar has melted and the mixture has slightly thickened, add the ground and whole sesame seeds and cardamom powder.

6. Add cardamom powder & sesame seeds.

7. After sometime the mixture starts leaving the sides of the pan

7.Til mixture leaves the sides of pan.

8. In the meanwhile grease a plate and spread the mixture in the plate. Lastly, garnish  with chopped pistachios.

8. Transfer and set the mixture.

9. Let it set for at least 2 hours  and then cut into required shapes.

9. When cool cut into pieces.

What to serve with Til ki Burfi

Serve til ki burfi alongside Nankhatai and Karak Chai or a glass of Badam Shake

Tips

  1. Keep the flame low to medium while roasting sesame seeds 
  2. Cut the burfi only when it has set properly so as to get neat pieces

FAQ

Yes you can swap sugar with jaggery with equal amounts. The taste will be slightly altered

During winter months this burfi can stay good at room temperature easily for a week.

Finally got down to making this easy peasy til ki burfi. It so much reminded me of the tahini halva I had sometime back. This recipe is a keeper for me as I love anything with sesame seeds in it. I used ghee instead of butter.
