Vegetable Stuffed Homemade Buns | Stuffed Buns with Veggies are blissful baked treats for everyone. They make for a great breakfast, appetizer or snacking option. Kids adore these Homemade Vegetable Buns.
When my son was in lower classes, I would treat him to these Stuffed Veggie Buns on our way back from his weekend activities club. This implied that we would have to wait for the weekends to indulge in these amazing baked goods. Who would have the patience? The creepy crawler inside of me tingled and itched as it always does to make these baked Stuffed and Baked Buns Recipe from Scratch at home. It was a time when I had quit my full-time job as a teacher and was settled comfortably at home after so many years. I was joyfully exploring my hidden love of cooking.
I have made a smaller version of these stuffed buns with Veggies – Mini Buns on a few occasions. Your guests will praise and appreciate your efforts , believe me. But somehow haven’t be able to video record it.

What is Stuffed Veggie Buns Recipe
These veggies buns are small, round and pillowy bread buns encasing a stuffing of veggies that is sauted with aromatic herbs and spices. When baked, their exterior is golden brown with a crunch of sesame seeds.
The aroma of fresh baked buns is exhilarating. The key to good baking is to just follow proper weight measurement. You can vary the stuffing according to your liking. It makes a delicious and convenient meal on the gol Stuffed buns are bound to impress the guests.
Ingredients:
Buns Dough
- All purpose flour – You may use 50:50 of whole wheat flour and all purpose flour.
- Instant yeast
- Salt
- Butter OR olive oil
- Milk powder
- Sugar
- Milk – for kneading dough and for brushing
- Sesame seeds – For sprinkling on the buns
Vegetable Stuffing
- Vegetables – Chopped potato, French beans, carrots, bell peppers, onions and green peas
- Ginger garlic – Paste or finely chopped
- Pav Bhaji premix powder – Use store bought or homemade
- Oil
- salt to taste
How to make Vegetable Stuffed Homemade Buns with step by step instructions
Make Dough for Buns
1. Firstly, lightly mix sugar and yeast with lukewarm water. Cover and set aside for 10-15 minutes till frothy.
2. Secondly, in a large mixing bowl, combine all purpose flour, milk powder, salt, oil or butter.
3. Add the frothy yeast mixture and knead into a dough. You may add a little more milk or flour as needed.
4. Once the dough is mixed, remove it form dough hook and knead gently with your hands. This enables better gluten formation. But do not over knead. Apply some oil on the dough so that it doesn’t dry.
5. Turn the dough into a well greased bowl. Cover with a plastic wrap and set aside for 1 or 2 hours. The dough will double in volume by then.
Make Vegetable Stuffing
6. For this firstly, boil the potatoes, beans. carrots and peas in just enough water. Then crush (do not mash completely) the boiled vegetables.
7. Secondly, heat oil in a pan. saute the onions for sometime. Then, add ginger-garlic paste and saute for a minute. Now add chopped capsicum and saute for a few more seconds. Now add the pav bhaji masala powder and salt. Saute for a while.
8. Now add the vegetables and combine well on low flame. Switch off the flame. Cover and set aside.
How to make Veggie Stuffed Buns
9. The dough will have doubled in volume by now. Knock the dough lightly to expel any air pockets.
10. Divide the dough into equal portions.
11. Roll out each ball of dough. Place a teaspoon of the vegetable stuffing.
12. Bring together the edges of the dough and pinch it to seal. Make a nice neat ball. Do the same for all the buns.
13. Line up a baking tray with parchment paper and grease it. Place the buns keeping enough space between them with seam side down .
14. Brush the top of each bun with milk and sprinkle sesame seeds. Let the buns rest for around 10 minutes.
15. In the meantime, preheat oven to 220°C.
16. Once the buns have rested, place the baking tray in the preheated oven. Bake for 20-25 minutes till done.
17. Cool on a wire mesh. Brush with some butter.
18. Enjoy them fresh . The remaining buns stay good for a day or two in the refrigerator.

FAQ
After kneading in the mixer do we have to knead by hand for too long
No , if you have kneaded in the mixer for 5-7 minutes, then just smoothening out the dough on the counter is all that is needed. Or else knead half way in the mixer and the remaining by hand till the dough is elastic and smooth. Do not over knead.
What is the shelf life of these Vegetable Stuffed Homemade Buns
Since these are stuffed with vegetables, consume the buns right away or maximum till the following day. Cover them with cling wrap or pack them in ziplock before placing them in the fridge if consuming the following day. Before serving, lightly heat the buns in a microwave oven.

- 250 gm all purpose flour OR 125 gm all purpose flour plus 125 gm wholewheat flour
- 1 tsp instant yeast
- 1 tsp salt
- 4 tsp butter OR olive oil
- 1.5 tbsp milk powder
- 1 tbspn sugar
- 190 ml milk
- Butter and milk for brushing

- 1 chopped potato medium
- 1/2 cup French beans finely chopped
- 1/2 cup carrots finely chopped
- 1/4 cup green peas
- 1/4 cup capsicum chopped
- 1/2 cup onions finely chopped
- 1 tsp ginger garlic paste
- 2-3 tsp pav bhaji masala powder
- 2- 3 tsp oil
