Chakli is crispy deep fried mostly spiral savouries. They are indispensable snacks especially during festivals such as Diwali or enjoyed over a cup of tea. Chakli is also known by other names like Chakri in Gujarati or Murukku in South India. This chakli is made in various ways, each rendering a unique taste and texture to the chakli. Apart from predominant use of rice flour in chakli, other flours such as chickpea flour, soy flour, all purpose flour, urad dal flour are also added. The version that I am sharing here uses rice flour along with a little of chickpea flour and all purpose flour.
A chakli press is mandatorily required to make chakli. It makes things a lot simpler. This homemade instant chakli go very well with tea. Chakli can be made gluten free by using only rice. In that case do not add the asafoetida also. Though traditionally chakli is fried but you can bake chakli for a healthier option.
For now, make and enjoy chakli with this version. One bite into it… and there you go munching and munching…………!

around 1/2 to 3/4 cup lukewarm water to knead dough
Method:
Organise ingredients.
In a large bowl mix together rice flour, besan (chickpea flour) and maida (all purpose flour).
Mix the flours.
Add in the salt, red chili powder, ajwain (carom seeds), white sesame seeds, hing (asafoetida) Mix until well combined.
Add warm butter to the flour mixture and rub until flour mix resembles crumbs.
Then add a tablespoon of plain yogurt and mix well.
Start adding water little by little to knead all of it to a smooth and soft dough. I used around 1/2 cup lukewarm water.
Cover the dough and let it rest for around 20 minutes.
After the dough has rested, grease the chakli press with oil and then add the dough into it.
Start piping the chakli on parchment paper.
Snap the dough after you have have 3-4 spiral rounds and seal the ends.
Repeat procedure for all chaklis.
Heat oil on medium heat in a kadai/wok.
Add chaklis to the oil, one at a time.Do not over crowd the kadai. Fry in small batches of 3-4.
Fry on medium heat until the chakli turns golden brown in color.
Remove from oil and drain on paper towel. Let the chaklis cool completely and then store in air tight container.
Enjoy chakli over a cup of tea!
Recipe Notes:
Fry chakli in low to medium hot oil in small batches of 3-4.
Use just enough butter for the flour otherwise the chakli may turn hard due to less butter. On the contrary if more butter is used the chakli may break and shaping chakli may be difficult.
Store in air tight containers so that chakli remain crispy.
