- Spices – bay leaf, nutmeg powder, black pepper powder and salt

- Croutons OR breadsticks (optional)

How to make Carrot and Tomato Soup with step by step instructions
1. Firstly, heat olive oil in a cooking pot or pressure cooker.
2. Secondly, add bay leaf and chopped garlic. Saute for few seconds.
3. Thirdly, add chopped onion, carrot and tomato. Saute for a minute.
4. Then, add water and cook till vegetables are soft . If using pressure cooker, cook for 3-4 whistles on medium flame.
5. Cool and blend the vegetables till smooth. Return the soup to the pot.
6. Add some water to desired consistency. Generally, it is a thick soup
7. Bring the soup to boil. Season with salt.
8. Lastly, sprinkle some nutmeg powder and black pepper powder.
How to serve
Serve Carrot Tomato Soup hot or cold.
Serve hot in a soup bowl with croutons. You may serve along with breads such as Whole wheat Pumpkin Yeast Bread, Zaatar Cheese Manakish , Olive Cheese Zaatar Pull Apart Rolls or Grilled Cheese Pita Sandwich.
You may serve along with Marinara Pasta with Vegetables .
A plate of Red Kidney Bean Protein salad , Bean Sprouts Salad or Fattoush Salad Recipe with Chickpeas to go with Carrot Tomato soup would be a great idea.
