Apple Cinnamon Cake – Eggless recipe | Apple Cake No Butter No Egg | Apple Cake recipe without Egg is light, soft and packed with juicy apples. Not overly sweet at all! It is served as a dessert or sweet treat for special occasions.
I am addicted to the light and soft texture of egg-based cakes. So when it comes to eggless baking, my expectations are really high. Even the slightest flavor of baking soda is annoying. But this cake has passed all such checks. It is just the perfect one!
Why bake Eggless Apple Cinnamon Cake
Here is my self-promulgated perspective to eggless baking. Generally, during Indian festivals and ceremonies, delicacies, savories , sweets or desserts without eggs are only permitted That’s why Indian mithai (sweets) such as Nectarous Gulab Jamun, Kaju Katli , Gajar Ka Halwa, Milk Peda or Til ki Burfi are widely consumed .
To enjoy cakes for celebrations and ceremonial fervor, eggless baking has spurred forward by shifting trends. As a result, the idea of eggless cakes has gained significant popularity throughout the nation.
As I speak, there are a variety of cakes across the globe in both egg as well as egg free versions. We have English pound cakes, festive Dates Cakes, Yule cakes, Parsi Mawa cake, Rasmalai cake, Gulab jamun Cake, Middle East Basbousa and Cakes with tahini and olive oil and so forth.

What is Apple cake with Cinnamon
This Apple Cake with Cinnamon is an eggless moist cake base infused with small chunks of apple and flavors of cinnamon as well as nutmeg. The combination of sweet apples and aromatic cinnamon creates a comforting taste.
Apple Cinnamon Cake with eggs generally involves mixing flour, sugar , baking powder, egg, butter and cinnamon. Grated apple or apple pieces are then folded into the cake batter for flavor, moisture and taste.
However, this post is an eggless version and hence it uses substitutes of egg such as curd and baking soda in baking.
Dry ingredients such as flour , baking powder and baking soda and salt are mixed together in one separate bowl. These dry ingredients are then mixed into the wet ingredients bowl comprising of oil, curd, sugar. Finally, apple pieces are folded in and milk is added for consistency.
Ingredients
For Measurements refer to the RECIPE CARD further below.
Flours – A mix of Whole wheat flour and all purpose flour in the ratio of 1:1
Apple – Peeled and finely chopped or grated
Oil – Any neutral unflavored oil. I used sunflower oil.
Brown sugar – powdered. You could use refined white sugar .
Flavorings – Cinnamon powder, nutmeg powder and vanilla essence.
Baking powder – Check expiry date
Baking soda – Check expiry date
Salt – a pinch
Curd – Use fresh stock
Milk – Optional. Used for adjusting consistency of cake batter.
Almonds – crushed or slivers for decoration

How to make Apple Cinnamon Cake with step by step instructions
Preparation for baking
Preheat oven at 180°C for 10 minutes
Line baking tin (7″ x 2″ x 3″) with parchment paper.
Peel and finely chop apple.
Mixing
Firstly, in a bowl sift both flours, baking powder, baking soda and salt.
Secondly, in another bowl, mix curd, oil and brown sugar.
Now add chopped apples to curd-oil-sugar mixture and incorporate well.
Add to it the flours mixture, cinnamon powder , nutmeg powder and vanilla essence.
Mix well to form a smooth batter.
If batter is dry or thick, add 1-2 tablespoons of milk.
Fill the baking tin with the prepared batter.
Tap to release air bubbles.
Decorate with chopped almonds
Baking
Bake in preheated oven at 180ºC for 35 minutes on middle rack.
After 35 minutes, take out the cake from oven and do the tooth pick test.
If need be bake for five more minutes or so.
Finally, when the cake is out from the oven, let it rest for 5 minutes.
Transfer to cooling rack.
When the cake has cooled down, slice it and enjoy.
What to serve with
Serve this cake with Kadak Chai or Cardamom Caffe Latte.
I enjoy my cakes plain. But you could dust the cake with specks of brown sugar before baking. You could also add a drizzle of caramel sauce or orange glaze.
Tips for a perfect Apple Cinnamon Cake
All baking ingredients to be at room temperature.
Curd used must be fresh.
Before using, check expiry dates of baking powder and baking soda
Instead of using equal ratios of whole wheat and all-purpose flour, you may use only all-purpose flour or whole wheat flour. Amount of milk will then vary to adjust the consistency of cake batter.
You may fold in some cranberries or nuts into the cake batter.

Ingredients
- 50 gm Whole wheat flour
- 50 gm All-purpose flour
- 80 gm Apple peeled and finely chopped
- 40 ml Oil unflavored oil
- 80 gm Brown sugar powdered. or white sugar
- ¼ tsp Cinnamon powder
- 1/8 tsp Nutmeg powder
- 1/2 tsp Baking powder
- 1/4 tsp Baking soda slightly heaped
- a pinch Salt
- 40 gm Fresh Curd
- 1-2 tbsp Milk optional
- 1/2 tsp vanilla essence
- Almonds chopped or slivers for decoration.

FAQ
Why does the cake sink in middle
Reason could be due to under baking. Since cake did not go into oven as soon as it was mixed or the oven was not preheated to a specified temperature.
Why is the cake dense
This could be because a) flour is too much or b) the batter is overmixed
Why cake is dry
Over baking or baking at high temperature could lead to a crumbly dry texture.

Mmmm! I loved the cake. I am finding it difficult to stop drooling over the cake. Apples, cinnamon and an eggless cake I cannot even claim I have no eggs. Baking some as soon as it rains here. Will make an excellent way to celebrate the break from the heat.
