Pasta Corn salad is a cold salad recipe perfect to beat the heat. It is an easy to make, colorful and  crunchy salad. This is quick, easy and vegan salad. It is a perfect salad for picnics, or while watching your favorite TV shows or chats with friends.

This salad is often repeated when planning my party menu.

Ingredients:

  • 1/2 cup small macaroni boiled al dente
  • 1/2 teaspoon  oregano
  • 1/2 teaspoon finely chopped garlic
  • 1/2 cup boiled corn kernels
  • 1/4 cup chopped green capsicum
  • 1/4 cup chopped red capsicum
  • 1/4 cup  chopped finely chopped carrot
  • 1/8 cup chopped scallions 
  • 1 teaspoon of apple cider vinegar OR white vinegar
  • 1/2 teaspoon chaat masala OR cheese onion powder
  • 1/4 teaspoon crushed black pepper
  • juice of 1 lime or as needed
  • 2 teaspoon extra virgin olive oil

How to make Corn Pasta Salad

Heat a teaspoon of olive oil and saute chopped garlic .     

Add oregano to the garlic and saute for a few seconds.

  • Finally add the pasta and further saute  for a few seconds. Put off the flame. Set aside to cool.

HOW TO PROCEED:

  • Take the sauteed and cooled macaroni in s a tossing bowl.
  • To the macaroni add all the remaining ingredients – corn, capsicum, carrot, scallion, vinegar, lime juice,salt, chaat masala, crushed black pepper and  olive oil.
  • Toss nicely.    
  • Check for seasoning and adjust
  • Enjoy mouthfuls of salad.;)

Notes

Always remember to toss just before serving.
Any kind of small to medium size pasta can be used .
